- 1 cup brown sugar
- 1/2 cup fajita seasoning (such as Fiesta®)
- 2 tablespoons Hungarian sweet paprika
- 2 racks pork spareribs, fat trimmed
- 1 cup beer
- 3 cloves garlic, minced
- 1 tablespoon honey
- 3 tablespoons Worcestershire sauce

I have always loved Cajun foods but my wife doesn't like the 'kick
- 2 teaspoons olive oil
- 2 boneless skinless chicken breasts, cut into bite-size pieces
- 8 ounces kielbasa, diced
- 1 onion, diced
- 1 green bell pepper, diced
- 1/2 cup diced celery
- 2 tablespoons chopped garlic
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- salt and ground black pepper to taste
- 2 cups uncooked white rice
- 4 cups chicken stock
- 3 bay leaves
- 2 teaspoons Worcestershire sauce
- 1 teaspoon hot pepper sauce

- 1 LB HASH BROWNS
- 1 1/2 LB SHREDDED SMOKED BEEF
- 1 LARGE RED BELL PEPPERS

Garlic-Chive Mashed Potatoes

Place cubed potatoes and garlic in large saucepan and cover with water; bring to a boil
- 4 1/2 c Yukon Gold; or baking
- 6 lg cloves Garlic; peeled
- 1/2 ts Salt
- 2/3 c 1% milk
- Whole chives; optional
- 1/2 c Plain low-fat yogurt
- 1/4 c Chopped fresh chives
Ground Beef Enchilada Casserole

To serve a crowd double all ingredients and bake in a large casserole dish
- 1 lb ground beef
- 1 medium onion, finely chopped
- 2 tablespoons minced fresh garlic
- 1 small green bell pepper, seeded and finely chopped
- 2 teaspoons dried chili pepper flakes (optional)
- 1 tablespoon seasoning salt (or to taste or use white salt)
- black pepper
- 1 (4 ounce) can green chilies, diced
- 12 (6 inch) corn tortillas (cut into about 1-1/2-inch pieces)
- 1 (10 ounce) can cream of mushroom soup, undiluted
- 1 1/2 cups canned sliced black olives
- 1 1/4 cups red enchilada sauce (I use my own recipe for this)
- 1/2 cup sour cream
- 3 1/2 cups cheddar cheese (or use a Mexi-blend cheese)
- 2 firm Tomatoes, coarsely chopped
- shredded Lettuce
- diced tomato
- chopped sweet onion
