- 10 TO 15 LB PORK LOINS ( TYPICALLY 3 TO 5 LB EACH )
- 1 GAL APPLE CIDER
- 3 OZ INSTA CURE # 1
- 1/4 CUP HONEY MOLASSES SWEETNER
- 2 CUP BROWN SUGAR
- 2 TBSP GROUND ALL SPICE
- 3 TBSP BLACK PEPPER
- 1 TBSP GROUND CLOVES
- 1 TBSP ONION POWDER
- 1 TBSP GARLIC POWDER
- 1/4 CUP GROUND MUSTARD
Beef and Broccoli Wellington

Brown ground beef with onion and mushrooms in a skillet over medium heat; drain
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 1 (6 1/2-oz.) can mushroom stems and pieces, drained
- 1 (20-oz.) pkg. frozen chopped broccoli, thawed
- 2 (8-oz.) pkgs. shredded mozzarella cheese
- 1 (8-oz.) container sour cream
- 2 (8-oz.) tubes refrigerated crescent rolls
BEER & MOLASSES BBQ SAUCE

Mix all ingredients in heavy medium saucepan
- 12 OUNCE HEINZ CHILI SAUCE
- 1 CUP MOLASSES
- 1 -12 OUNCE CAN BEER
- 3 TBSP DIJON MUSTARD
- 2-3 TBSP CHILI POWDER ( PER TASTE )
- 2 TSP SOY SAUCE
- 1-3 TSP HOT PEPPER SAUCE ( PER TASTE )
- 1 - 2 TSP LEMON JUICE
- OPTIONAL
- 1 - 2 CUP BROWN SUGAR
Crunchy Eggplant Parmesan

Preheat oven to 400 degrees F (200 degrees C)
- cooking spray
- 2 eggplants, peeled and sliced crosswise 1/4-inch thick
- 2 teaspoons salt, or as needed
- 4 eggs, beaten
- 1 1/2 cups panko bread crumbs
- 2 tablespoons dried Italian herb seasoning
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups prepared pasta sauce
- 2 cups shredded Italian cheese blend
- 1/3 cup grated Parmesan cheese
Mexican Rice Pilaf

In a large saucepan, heat oil over medium high heat
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 teaspoon minced garlic
- 1 1/2 cups vegetable broth
- 1 1/2 cups instant brown rice
- 2 teaspoons chili powder
- 1 jalapeno pepper, seeded and minced
- 1/2 teaspoon ground cumin
- 1 red bell pepper, chopped
- 1 large tomato, seeded and chopped
- 1 cup shredded Monterey Jack cheese
Brown Sugar Meatloaf

I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar
- 1/2 cup brown sugar, packed
- 1/2 cup ketchup
- 1 1/2 lbs lean ground beef
- 3/4 cup milk
- 2 eggs
- 1 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1 small onion, chopped
- 1/4 teaspoon ground ginger
- 3/4 cup saltine crumbs, finely crushed

- 1 CUP MAYONNAISE
- 1 CUP SOUR CREAM
- 2 TBSP BEAVERS DELI MUSTARD

Wienerschnitzel Chili Sauce

1. Brown ground beef and ground pork in a large saucepan over medium heat
- 3/4 pound ground beef
- 1/4 pound ground pork
- 6 cups water
- 1/4 cup cornstarch
- 1/2 cup all pourpose flour
- 6-ounce can tomato paste
- 1/4 cup chili powder (McCormick)
- 3 tablespoons white vinegar
- 1 tablespoon salt
- 1 tablespoon dried minced onion
- 1 1/2 teaspoons granulated sugar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
