Preheat oven to 350 degrees F (175 degrees C)
- 1 (18.25 ounce) package yellow cake mix
- 1 egg
- 1/2 cup butter, melted
- 1 (29 ounce) can pumpkin puree
- 2 eggs
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 cup white sugar
- 2/3 cup evaporated milk
- 3/4 cup white sugar
- 1/2 cup butter, softened

Carne Asada Marinade

In a medium bowl, mix extra virgin olive oil, fresh lemon juice, garlic, salt and pepper

- 4 tablespoons fresh lemon juice
- 2 cloves garlic, finely chopped

Easy Enchiladas (Beef or Chicken)

These easy enchiladas are my husband's favorite recipe of mine
- 1 lb ground beef or 1 lb boneless skinless chicken breast
- 1/4 cup chopped onion
- 1 teaspoon garlic powder (I prefer fresh minced)
- 1 tablespoon Worcestershire sauce
- 1 (8 ounce) can tomato sauce
- 1 teaspoon paprika
- 1 teaspoon oregano
- 2 teaspoons chili powder (more or less for your taste)
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- 3 cups shredded cheese (I like the jack or cheddar combos)
- 1 (10 ounce) can enchilada sauce (I prefer the green sauce)

Puerto Rican Shredded Pork

Using a sharp knife, poke a few holes into the pork and stuff holes with half of the crushed garlic
- 2 pounds boneless sirloin pork roast, or sirloin tip roast, trimmed and tied with kitchen twine if necessary*
- 1 tablespoon vegetable oil
- 4 cloves garlic, skins removed, crushed
- 1 tablespoon cumin
- 1/2 tablespoon coarse salt
- 1 teaspoon oregano
- 4 oranges, juiced**
