- 1/4 cup / 65 ml all purpose soy sauce (I use Kikkoman all purpose, or use more light soy sauce) (Note 1)
- 1/2 cup / 125 ml oyster sauce
- 1/4 cup / 65 ml Chinese wine (or dry sherry) (Note 5)
- 1/4 cup / 40 g cornstarch / cornflour
- 1 tbsp sugar
- 2 tbsp sesame oil
- 1 - 2 tsp ground white pepper (I sometimes use 1 tbsp, I like the spiciness!)

For the Filling and Baking the Pie: Preheat oven to 450 degrees
- Filling Ingredients:
- 4 Tablespoons Unsalted Butter (1/2 stick) at room temperature
- 3/4 Cup Light Brown Sugar
- 2 Tablespoons Honey
- 1 1/2 Teaspoons Each Lemon Juice and Orange Juice
- 1 1/2 Cups Sweet Potatoes (about 2 Large), roasted and mashed (Note: I passed the sweet potatoes through a hand-cranked food mill for a silkier result)
- 2 Large Eggs, slightly beaten
- 1/2 Cup Canned Evaporated Milk
- 1 1/2 Teaspoons Each Grated Lemon and Orange Zest
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Grated Nutmeg
- 1/2 Teaspoon Ground Cinnamon
- 1/4 Teaspoon Ground Allspice

- 1 1/2 sleeves of saltine crackers (about 60 crackers)
- 1/3 to 1/2 cup softened unsalted butter (we found that 7 tablespoons of butter was the perfect amount to hold the crumbs together)
