Cheesy Onion and Potato Gratin

Adjust an oven rack to center position and preheat oven to 400°F
- 2 tablespoons finely chopped fresh parsley leaves
- 1/2 cup fine bread crumbs
- 1 medium clove minced garlic (about 1 teaspoon)
- Kosher salt and freshly ground black pepper
- 1 1/2 pounds small new potatoes
- 1 1/2 pounds pearl onions
- 1/2 pound bacon, cut into 1/2-inch lardons
- 2 tablespoons heavy cream
- 6 ounces grated Comté or gruyere cheese
"Hearty Slow Cooker Beef Stew"

Cut the roast into 1 inch pieces
- 2-pound chuck roast, cut into bite-sized chunks
- 1 cup of all purpose flour
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary, crushed

- 1/4 teaspoon paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon of freshly cracked black pepper

- 2 large russet potatoes, peeled, quartered and cut into chunks
- 2 large carrots, scraped and cut into chunks
- 1 stalk (rib) of celery, sliced thick
- 1 cup of sliced sweet or yellow onion
- 2 cups of water
- 4 cups of beef broth or stock
- 1 tablespoon of beef base, (like Better than Bouillon), optional
- 2 teaspoons of Kitchen Bouquet, optional
- Hot, cooked rice, optional
New Orleans–Style BBQ Shrimp

Melt the butter in a 12-inch skillet over medium-high heat
- 1 1 1 medium lemon
- 8 8 8 oz. (1 cup) unsalted butter
- 2 2 2 Tbs. Worcestershire sauce
- 1 1 1 Tbs. chopped garlic
- 4 4 4 bay leaves
- 1 1 1 tsp. sweet paprika
- 1/4 1/4 1/4 tsp. cayenne pepper
- 1/4 1/4 1/2 oz. kosher salt (1 Tbs. if using Diamond Crystal, 1/2 Tbs. if using Morton’s)
- 1/2 1/2 1/2 tsp. freshly ground black pepper
- 1/2 1/2 1/2 tsp. freshly cracked black pepper
- 24 24 to 15 shrimp (12 to 15 per lb.), unshelled, preferably domestic wild-caught and head-on
Sausage, Pepper, and Onion Stromboli

Preheat the oven to 375°F
- 1 batch whole wheat pizza dough
- 1 pound Italian chicken sausage links
- 1 tablespoon extra virgin olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1/2 large sweet onion (or 1 small), sliced
- 6 ounces mozzarella cheese, shredded
- 1 ounce Parmigiano-Reggiano cheese, freshly grated
- Additional extra virgin olive oil to drizzle over top
- Italian seasoning (about 1 teaspoon)
- Marinara sauce

1. Mix the cornmeal, and 1/2 cup of the flour, baking powder and salt
- 2 Cups Yellow Cornmeal
- 1/2 Cup Flour Plus More for Dusting on the Hot Dogs
- 1 Teaspoon Fresh Baking Powder
- 1 Teaspoon Salt
- 1 Egg Lightly Beaten
- 2 Cups Buttermilk
- 2 Tablespoons Bacon Drippings or Peanut Oil

- 1 Thin Sticks With Pointy Ends (some People Use Chopsticks, I used sticks designated for candy apples.)

INSTRUCTIONS Sift the flour, cocoa, baking powder, baking soda and salt, if using
- For the cake:
- 1 and 1/2 cups all-purpose flour
- 3/4 cup Dutch-process cocoa powder*
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt, if using unsalted butter
- 1/2 cup butter, at room temp (115 gms)
- 3/4 cup brown sugar
- 1/4 cup caster sugar
- 1 egg, at room temp
- 1 tsp vanilla extract
- 1 cup whole milk mixed with 2 tsps lemon juice (or use buttermilk)
- For the frosting:
- 2 cups icing sugar/powdered sugar
- 2/3 cup cocoa powder
- 6 tbsps butter, at room temp
- 6 to 8 tbsps cream (preferably whipping cream, which is thicker than regular cream)
