"Chicken Pot Pie Soup

a creamy chicken soup with potatoes, peas, onion, celery and carrots
- For the chicken:
- 3 1/2 - 4 cups low-sodium chicken broth
- 1/4 teaspoon salt
- 1 teaspoon fresh ground black pepper
- a few sprigs fresh thyme
- 3 boneless skinless chicken breasts (or 3 cups diced, cooked chicken i.e. rotisserie)
- For the soup:
- 5 tablespoons unsalted butter
- 1 large onion diced
- 2 stalks celery diced
- 2 large carrots peeled and diced
- 1/3 cup unbleached all-purpose flour
- 3 1/2 cups chicken broth or stock
- 2 cups whole milk or half-and-half
- 2 russet potatoes peeled and diced
- 1 cup frozen peas
- 3 cups diced cooked chicken
- 1/2 teaspoon salt
- 1-2 teaspoons fresh ground black pepper

Directions Add all salad ingredients to a large serving bowl
- 3 medium apples, diced
- 6 stalks celery, diced
- 3 oz blue cheese, crumbled
- 1/3 cup dried cranberries
- 1/2 cup Maple Glazed Pecans
- 4 tbsp extra virgin olive oil
- 2 tbsp cider vinegar
- 1 tsp maple syrup
- 1 tsp dijon mustard
- 1/2 tsp kosher salt

- 2 Split (1 Whole) Chicken Breasts, bone in, skin on
- Good Olive Oil
- Kosher Salt
- Freshly Ground Black Pepper
- 4 Ounces Thinly Sliced Pancetta
- 1 Large Garlic Clove, chopped
- 2 Tablespoons Chopped Fresh Flat-leaf Parsley
- 1 1/2 Teaspoons Anchovy Paste
- 1 Teaspoon Dijon Mustard
- 1 1/2 Tablespoons Freshly Squeezed Lemon Juice
- 1/2 Cup Good Mayonnaise
- 1 Large Ciabatta Bread or Wrap
- 2 Ounces Baby Arugula, washed and spun dry
- 12 Sun-dried Tomatoes, in oil
- 2 Ounces Parmesan, shaved (2 to 3)

- 1/2 stick of butter
- 2 tbsp capers
- juice of 1 lemon
- 1/4 cup chopped parsley
- 1/2 cup milk/cream/half & half (depends on how creamy you want the sauce)
