- 1 1/2 cups sugar
- 2 large eggs
- 1 cup mashed bananas (about 2 large ripe bananas)
- 1 tablespoon vanilla extract
- 1 1/4 cups sour cream
- 1/2 cup walnuts, chopped
- Cream Cheese Filling
- 8 ounces cream cheese, softened
- 1/4 cup reserved cake batter (see instructions)
- 1/4 cup sugar
- 1 teaspoon vanilla
- Vanilla Glaze
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk

- Marinade:
- 2 garlic cloves , minced
- 2 tsp brown sugar
- 1 1/2 tbsp honey
- 1 1/2 tbsp hoisin sauce
- 2 tsp oyster sauce
- 1 1/2 tbsp light soy sauce (or all purpose)
- 1/2 tsp five spice powder
- 1/2 tsp sesame oil (not critical)
- Few drops red food colouring , optional
- Chicken:
- 750 g / 1.5lb chicken thigh fillets , skinless boneless (or breast)
- 1 tbsp vegetable oil
- 10 – 12 bamboo skewers , soaked in water for 1 hour (optional)
- Green onions / scallions , finely sliced, for garnish (optional)

- 2 tbsp olive oil , plus more for drizzling
- 1/2 cup / 50 g grated parmesan , the sand-like type (Note 1)
- 1/2 tsp garlic powder (or sub with onion powder)
- 1/2 tsp dried oregano or thyme
