"How To Eat Salad Every Day & Like It!

Make eating salad as easy as can be with these tips for easy salads every day of the week!
- PROTEIN OPTIONS:
- VEGETABLE OPTIONS: any combination of the below ingredients will keep nicely for several days in the refrigerator
- chopped greens: typically a mix of romaine, spring mix, spinach, arugula, or butter lettuce (rarely all of them, just whichever ones I have on hand at the time)
- tomatoes: sliced or chopped
- Pickles: sliced or chopped
- corn: canned, frozen or fresh
- bell peppers: sliced thin or chopped small
- red onions: sliced thin
- green onions: sliced thin
- BACON!
- ground beef or ground turkey: cooked and seasoned generously with Mexican spices or taco seasoning
- taco meat with black beans and corn
- pulled pork or carnitas: shredded and chopped bite-size
- cooked or roasted chicken: shredded or diced
- ham: diced
- hard boiled eggs: chopped
- canned tuna fish: drained well
- cooked shrimp or fish
- TOPPING OPTIONS:
- cheese: shredded diced, or crumbled
- fruits: diced apples or pears orange slices, fresh berries
- plenty of crunch: croutons tortilla chips, or my personal favorite Fritos
- fresh lime
- salt and pepper
- salad dressing of your choice: Italian, Poppyseed, White Balsamic Vinaigrette, and the absolute BEST Homemade Ranch Dressing are a few of our favorites.
Chocolate Buttermilk Pudding

In a small saucepan whisk together cornstarch, sugars, cocoa powder, and salt until combined
- 1/4 cup cornstarch
- 1/3 cup sugar
- 2 tablespoons light brown sugar
- 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 1/2 cups whole milk
- 1 1/2 cups buttermilk
- 4 ounces 72% cacao chocolate, melted in a double boiler or microwave
- 2 teaspoons vanilla extract
Garlic Soup

Cook’s notes: The original recipe asked for chicken, goose or pork fat
- Olive oil – 2 1/2 tbsp
- Garlic – 16-18 cloves, peeled
- Chicken stock – 4 cups
- Egg yolks – 3
- Nutmeg – a good pinch
- Bacon fat – 1/2 tbsp (optional)
- Salt & pepper to taste

- 2/3 cup Dark Brown Sugar
- 1/3 cup Karo Corn Syrup, light or dark
- 2 Tablespoons Milk
- 1 heaping Tablespoon Corn Meal
- 2 Eggs
- Dash of Salt
- 1 teaspoon Vanilla Extract
- 1 cup Pecan meats, chopped
- 3 Tablespoons melted Butter

- 1 ounce dry ancho chile peppers
- 5 cups water
- 3 pounds chuck roast, sliced into 3/4-inch cubes
- 2 tablespoons vegetable oil
- 1 1/2 cups chopped onion (1 medium onion)
- 1 cup chopped Anaheim green chilies (2 peppers)
- 4 teaspoons minced garlic
- 3 tablespoons Gebhardt chili powder
- 2 tablespoons Mexene chili powder (or McCormick)
- 2 1/2 tablespoons dark brown sugar
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ground black pepper
- 1 teaspoon ground cumin
- 1 large Knorr beef bouillon cube (or 2 small beef bouillon cubes)
- 1/4 cup corn masa
- 4 cups chicken broth
- 1/2 cup lager beer (such as Budweiser)
- 1/3 cup El Pato tomato sauce
- 2 tablespoons apple cider vinegar
- 1 tablespoon lime juice
- 1 1/2 teaspoons dried Mexican oregano
- For Topping
- Shredded Cheddar cheese
- Chopped onion

HOT BUFFALO CHICKEN AND BACON GRILLED CHEESE

- non-stick cooking spray
- 8 slices bacon
- 3/4 cup hot buffalo sauce, such as Frank’s RedHot
- 1/4 cup cream cheese, at room temperature
- 1/4 cup shredded cheddar cheese
