INSTRUCTIONS Preheat the oven to 180C/350F

  • Tzatziki:
  • 1/2 tsp celery salt
  • 1 tsp ground cumin
  • 1/2 tsp garlic salt
  • 2 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1.8 kg-2kg (4 pound - 4 1/2 pound) boneless rolled pork shoulder joint with rind
  • 3 tbsp vegetable oil
  • 4 cloves garlic, peeled and minced
  • 3 cups hot chicken/pork/vegetable stock (use bouillon for gluten free)
  • 1/2 a large cucumber
  • 200 g (1 cup) Greek yoghurt (full fat works best)
  • 1 tsp white wine vinegar
  • 1 tsp dried dill (or 1 tbsp. fresh dill, chopped)
  • 1/2 a small clove of garlic, peeled and crushed
  • 1/2 tsp sugar
  • pinch of salt
  • To Serve:
  • 6 Warm Greek pita breads (use gluten-free wraps if required - Newburn bakehouse do a pretty good one)
  • 1 shredded lettuce (I use O'So Sweet variety)
  • 10 cherry tomatoes, quartered
  • 1 small red onion, peeled and thinly sliced
  • Small portion (approx 150g/2 cups) cooked french fries (optional)

  • 1 Lb White Button Mushrooms, quartered
  • 1 C Frozen or Fresh Pearl Onions
  • 1/4 C Fresh Parsley, minced
