Step 1: Preheat the oven to 350 degrees
- 2 boneless skinless chicken breasts (pounded to 1/4-inch thickness)
- 1/4 cup all-purpose flour
- 1 egg (beaten)
- 1/2 cup breadcrumbs
- 1/3 cup grated parmesan cheese
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried parsley

- 1/8 teaspoon ground black pepper
- vegetable oil (for frying)

Instructions Combine flour, baking powder, and salt in a large bowl
- 3 cups all-purpose flour (I use White Lily)
- 2 teaspoon baking powder
- 3/4 teaspoon salt
- 1 stick butter, cut into 1/2-inch cubes and very cold (i put it in freezer briefly)
- 3/4 about 3/4 cup ice water
- 3 ripe peaches, peeled and diced
- 1/3 cup peach preserves
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract (almond extract would also be good)
- Vegetable oil or Crisco for frying

- 7 ounces canned fire-roasted tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- tortilla chips for serving

Combine water, yeast, and sugar in bowl of stand mixer fitted with paddle attachment and let rest 5 minutes
- 1 cup lukewarm water
- 2 1/4 teaspoons instant yeast
- 1 tablespoon sugar
- 11 1/4 ounces (about 2 1/4 cups) bread flour
- 1 teaspoon salt
- 1/4 teaspoon anise seeds
- 2 tablespoons dried toasted onion
- 1/4 cup powdered milk
- 2 tablespoons unsalted butter, softened
- Egg wash (1 egg beaten with 1 tablespoon water)
