Slightly Tart (as a lemon bar should be!) and gloriously sweet!
- Crust
- 1 1 226g) c (2 sticks, 226g) butter, room temperature
- 1/2 1/2 1/2 c (100g) granulated (white) sugar
- 2 2 2 c (256g) all-purpose flour
- Filling
- 4 4 4 eggs, room temperature
- 1 1/2 1 1/2 1/2 (300g) cups granulated (white) sugar
- 1/4 1/4 1/4 c (32g) all-purpose flour
- 2/3 2/3 2/3 c (160ml) fresh squeezed lemon juice
Bacon Attack! Burger with Baconnaise

The jarred mayonnaise added to the food processor at the start makes it easier to create a more stable emulsion
- 1/2 Pound Bacon
- 1/2 Pound Pork Butt
- 3/4 Cup Rendered Bacon Fat, melted
- 3/4 Cup Canola Oil
- 2 Egg Yolks
- 1 Tablespoon Dijon Mustard
- 2 Tablespoons Mayonnaise (optional)
- 1 Tablespoon Water, plus more to correct consistency
- Lemon Juice to Taste
- Salt and Pepper to Taste
- 4 Strips Crisp Bacon, crumbled
- 2 Scallions, white and green parts, finely sliced (optional)
Coleslaw-Old Fashioned Icebox Coleslaw

This recipe for Old-Fashioned Ice Box Coleslaw has been around a long time
- 1/2 of a large head of cabbage or 1 small head chopped or grated (I just chop mine)
- 1 small purple onion, chopped (can use regular onion)
- 1 green pepper, chopped
- 1 carrot, chopped
- 1 teaspoon celery seeds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup white granulated sugar
- 1/2 cup white vinegar
- 1/3 cup oil (I use Canola)
- 1 teaspoon dry mustard
Tri-Tip Seasoning

Chop the parsley or crush it between your fingers to make it small enough to mix well with the other ingredients
- 3 Tablespoons non-iodized table salt
- 1 Tablespoon granulated garlic
- 1/2 teaspoon dried parsley
- 1/4 teaspoon black pepper, medium grind
- 1/4 teaspoon Accent (MSG)

- 8 ounces (228 grams) unsalted butter, softened- 1 cup
- 14 ounces (396 grams) granulated sugar- 2 cups
- 4 large eggs
- 1 1/2 tablespoon (25 milliliters) vanilla extract
- 8 1/2 ounces (240 grams) sour cream- 1 cup
- 16 ounces (455 grams) unsalted butter softened- 2 cups
- 1 ounces (30 ounces) Dutch processed cocoa powder- 1/3 cup
- 4 ounces (120 milliliters) heavy whipping cream- 1/2 cup
- 1 teaspoon (5 milliliters) espresso paste or 2 teaspoons (10 milliliters) espresso powder dissolved in 1 tablespoon (15 milliliters) water
- 11 ounces (310 grams) powdered/confectioner’s sugar- 2 3/4 cups
- 1 tablespoon (15 milliliters) vanilla extract
- Pinch salt
Maryland Style Steamed Shrimp

Prepare Shrimp by de-veining them
- 1/2 cup beer (you can also use apple cider vinegar)
- 1 tablespoon of celery seed
- 4 cups of water (stay beneath the steaming basket or rack)
- 1/2 cup OLD BAY® Seasoning
- 2 pounds large shrimp, peeled and de-veined, tails on
Georgia Pimento Cheese Sandwich

Mix all ingredients together in a bowl except toast and butter
- 3 cups cheddar cheese, shredded
- 1 (4 oz.) jar pimentos, drained, chopped
- 6 Tbsps. mayonnaise
- 1 Tbsp. Frank’s hot sauce
- 1/2 tsp. sugar
- 1/4 tsp. each garlic powder, onion powder, salt
- 8 slices Texas toast bread

1. Make teriyaki marinade by combining all the ingredients in a small saucepan over medium/high heat
- Teriyaki, Marinade:
- 1 3/4 Cups Water
- 1 Cup Soy Sauce
- 1 Cup Light Brown Sugar
- 1/2 Teaspoon Onion Powder
- 1/2 Teaspoon Garlic Powder
- Burger:
- 5 1/2 Ounces Ground Chuck Patty
- 1 Canned Pineapple Slice
- 2 Slices Cheddar Cheese
- 1 Sesame Seed Hamburger Bun
- 4 Teaspoons Mayonnaise
- 2 Tomato Slices
- 1/3 Cup Shredded Iceberg Lettuce
- 3 Fresh Onion Rings (3 to 4)
Chicken Fried Chicken with Southern Peppered Milk Gravy

- For the Gravy:
- 2 cups of White Lily self rising flour
- Pinch of kosher salt
- 6 turns of the pepper grinder
- Cajun seasoning (like Slap Ya Mama)
- 3 to 4 boneless, skinless chicken breasts, pounded flat
- Canola oil for the skillet, plus 2 tablespoons of bacon fat
- Pan drippings to equal 1/4 cup
- Reserved 1/4 cup of seasoned flour
- 1-1/2 cups of milk
- Kosher salt, to taste

- 8 Large Eggs
- 1/4 Cup Half-and-half
- 1/2 Teaspoon Table Salt
- 1/8 Teaspoon Ground Black Pepper
- 2 Teaspoons Vegetable Oil
- 6 Ounces Chorizo Sausage, chopped medium
- 1 Red Onion, chopped fine
- 1 Red Bell Pepper, stemmed, seeded, and choppd medium
- 1 Jalapeno Chile, stemmed, seeded, and minced
- 1 Tablespoon Unsalted Butter
- 6 Ounces Cheddar Cheese, shredded (1 1/2 cups)
- 3 Scallions, sliced thin
- 6 Flour Tortillas (8- to 9-inch)
- 1 Cup Sour Cream (optional)
- 1 Cup Salsa, jarred or fresh (optional)
