Savory Cheddar Cheese Bread

1) Put all of the ingredients into the bucket of your bread machine in the order designated
- 2/3 cup lukewarm milk*
- 2 cups (8 1/2 oz.) King Arthur Unbleached All-Purpose Flour
- 1 teaspoons salt
- 2/3 tablespoon sugar
- 2/3 cup grated extra-sharp cheddar cheese, firmly packed
- 2 2/3 Tbsp Vermont cheese powder**
- 1/2 teaspoon tabasco sauce, optional
- 1 teaspoon instant yeast
- Add an additional tablespoon of milk during the winter, or if you live in a dry climate.
- Substitute grated Parmesan cheese, if desired.
Faux Pho

Serves two, but doubles easily
- For broth:
- 1 medium onion, thinly sliced
- 4 large garlic cloves, thinly sliced
- One 2-3″ piece of fresh ginger, peeled and thinly sliced
- 6 whole cloves
- 1 whole star anise, bashed a bit to bruise it
- fresh ground black pepper
- Four 14 oz. cans chicken broth
- 2 Tb. brown sugar
- 2 ts. Asian fish sauce
- For soup:
- 6 to 8 oz. linguine-style rice noodles
- 6 to 8 oz. thinly sliced beef (raw) or pulled chicken (cooked)
- For table salad:
- 10 springs fresh cilantro
- 6 to 8 sprigs fresh Thai basil
- 6 to 8 sprigs fresh mint
- 2 serrano or jalapeño chiles, thinly sliced
- Generous handful bean sprouts
- 1 large lime, cut into wedges
- Sauces:
- Hoisin sauce
- Sriracha sauce

- 1 pound - 1 1/2 pound ground beef
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 can (28oz) crushed tomatoes
- 1 can red kidney beans, drained & rinsed
- 1 can pinto beans, drained and rinsed
- 1 - 2 tablespoons (8g - 16g) chili powder (depends on your chili powder’s spiciness & preference)
- 1 tablespoon (6g) cumin seed, ground
- 1 teaspoon (1g) dried oregano
- 1 tablespoon (15ml) olive oil
- Optional: 1 tablespoon (15ml) apple cider vinegar
- Brown sugar, kosher salt, black pepper to taste
- 1 cup (250ml) unsalted chicken stock
- 2 tablespoons (30ml) fish sauce
- 1 tablespoon (15ml) light soy sauce
- 3 tablespoons (49g) tomato paste
- 1 teaspoon (2.5g) unsweetened cocoa powder
- Lime, Sour cream
- Jalapeno pepper, diced and seeded
- Green onions
- Cheddar cheese
The "Original" Margarita

Run a wedge of lime around each glass and coat in kosher salt
- 9 shots freshly squeezed lime juice
- 6 shots of quality top shelf silver tequila
- 4 shots of Grand Marnier or Cointreau
- 1.5 cups of powdered sugar
- Crushed ice
- Kosher salt to rim the glass
- Lime slices or wedges
- Makes one pitcher. Total time: 10 minutes.
Simple Italian Antipasto

In a medium bowl, whisk all above ingredients until well blended
- Dressing:
- 1/4 pound sliced ham, cut into 1-inch chunks or pieces
- 1/4 pound sliced Genoa or other hard salami, cut into 1-inch pieces
- 1/4 pound fresh mozzarella cheese, cut into 1-inch chunks
- 1/4 pound Monterrey Jack cheese, cut into 1 inch chunks
- 1 cup of cherry or grape tomatoes, cut in half
- 1/2 green or red pepper, sliced into strips

"Oyster Stew Recipe

Serves 4-6 You may or may not need to add salt to this stew, depending on how briny your oysters are
- 5 Tbsp unsalted butter
- 1 pint oysters with their liquor, jarred or freshly shucked, about 2 dozen*
- 1/4 cup flour
- 2 celery stalks, minced
- 1 medium yellow or white onion, minced
- 1 3/4 cup milk
- 1/4 cup cream (can use all milk if you want)
- Splash of Tabasco, Crystal, or other hot sauce
- Salt
- Freshly ground black pepper
- 1/2 cup parsley, minced
- You may be able to find refrigerated jarred oysters (without shells) near the seafood counter at your local grocery store.
