Layered Triple Peanut Butter Krispie Treats

Spray a 9 x 13 pan with cooking spray, or alternatively grease pan with butter
- 1 st Layer - Krispe Treat Layer
- 3 cups Rice Krispies
- 1/2 bag (10.5-oz) miniature marshmallows
- 2 Tbs unsalted butter
- 1/3 cup creamy peanut butter (optional, but good!)
- 2 nd Layer - Peanut Butter Fudge adapted from Alton Brown with TJ's mini PB Cups
- 1/2 cup butter (1 stick)
- 1/2 cup smooth peanut butter
- 1/2 teaspoon vanilla extract
- 1 1/2 to 1 3/4 cups powdered sugar
- 1 container Trader Joe's (or other brand) mini Peanut Butter cups
- 3 rd Layer - Krispie Treat Layer
- 3 cups Rice Krispies
- 1/2 bag (10.5-oz) miniature marshmallows
- 2 Tbs unsalted butter
- 4 th Layer - Peanut Butter Ganache
- Generous 1 cup creamy peanut butter
- 2 cups chocolate, chopped

- 2 cups chicken stock
- 2 cups water
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 1 teaspoon kombu cha powder

"Korean Pork Bone Potato Soup/Stew (Gamjatang)

An authentic Korean Pork Bone soup (Gamjatang) is delicious, spicy, rich and full of flavor to warm you up on a col
- For the Soup:
- 6-8 pieces pork neck bones about 1.4 kg
- 10 cups water
- 1 large onion sliced
- 2 dried shiitake mushrooms
- 4-5 slices ginger to remove pork smell
- 1 tablespoon minced ginger
- 1 dried red chili pepper remove seeds
- 2 tablespoons Korean soybean paste Doenjang
- For the Sauce to add to the soup after simmered for 1.5 hours:
- 6-8 cloves garlic minced
- 3 tablespoons fish sauce
- 3 tablespoons cooking wine
- 1 tablespoons Korean red pepper paste Gochujang
- 2 tablespoons Korean coarse red pepper powder Gochugaru
- Vegetables:
- 4 large white potatoes peeled, quartered
- 1/4-1/2 napa cabbage sliced in quarters blanched
- 2 stalks of green onions diced
- 1/2 cup Asian chives diced
- Optional but enhances flavor:
- 10 Perilla leaves, sliced in thick strips (found in Korean or Asian supermarkets)
- Roasted sesame seeds
- Black pepper

- 2 Bunches Small Beets – Ends Trimmed and Scrubbed

- 1/2 c. granulated sugar
- 1/4 c. light corn syrup
- 1/2 tsp. kosher salt
- 2 T. ground cinnamon

- 1 tsp. vanilla
- 1 c. marshmallows
- 12 c. popped popcorn
CHICKEN TORTILLA SOUP

In a large heavy pot, heat the oil over medium heat
- 3 tablespoons cooking oil
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ancho chili powder (any chili powder may be substituted)
- 1/4 teaspoon ground red pepper
- 1 large onion, chopped
- 4 large cloves garlic
- 48 ounces canned chicken stock
- 28 ounces canned crushed tomatoes
- 2 1/2 teaspoons salt
- 6 (6-inch) corn tortillas, divided
- 1 1/2 pounds roasted or rotisserie chicken, cut into chunks or shredded
- 1/4 cup lightly-packed cilantro leaves, roughly chopped
- salt and pepper to taste
- Optional garnish/toppings: Serve with lime wedges, sliced/diced avocado, sour cream, greek yogurt, shredded cheese, crushed tortilla chips, additional chopped fresh cilantro.
