Chunky Beef Casserole

Delicious stew, prepared on the stovetop and finished in the oven
- 440 g lean casserole steak, cut into chunks
- 200 g shallots, peeled
- 4 cloves garlic, minced
- 500 g carrots, chunked
- 1 can chopped tomatoes
- 500 g beef stock (can use heaped tbsp Beef Bovil with water)
- 3 bay leaves
- 1 sprig thyme
- 300 g mushrooms, halved or baby mushrooms
Mom's Zucchini Bread

Mix the first 5 ingredients together
- 3 eggs, beaten light and foamy
- 2 cups sugar
- 3 tsp vanilla
- 1 cup oil
- 2 cups grated zucchini (do not peel)
- 3 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 3 cups flour
No Bake Cookies

No bake cookies from my childhood
- 1 3/4 cups white sugar
- 1/2 cup milk
- 1/2 cup butter
- 4 tablespoons unsweetened cocoa powder
- 1/2 cup crunchy peanut butter
- 3 cups quick-cooking oats
- 1 teaspoon vanilla extract
Lentil Soup

A basic lentil soup, made in the slow cooker
- 300 g puy lentils
- 1 large onion, finely chopped
- 1 large carrot, peeled and finely chopped
- 3 cloves garlic, minced
- 1 1/2 tsp ground coriander
- 3 tsp fresh ginger, minced
- 1.2 litres chicken or vegetable stock (or water and 3 OXO cubes)
- savoy cabbage and bacon (optional toppings)
Chicken, Lemon and Garlic Casserole

Really yummy with mashed potato and a side salad
- 2 lb / 908g skinless boneless chicken thighs, cubed
- 2 onions, chopped
- 2 large carrots, cut into short thick batons
- 1 bulb garlic
- 1 1/4 pt / 710 ml chicken stock
- 1 tbsp chicken Bovril (from concentrate)
- 7 oz / 198 g green beans, halved
- 1 lemon, thinly sliced

Another recipe from our curry feast in January 2010
- 1 large onion, peeled and finaly grated
- 4 chicken breasts, skinless and boneless, cut into bite-sized pieces
- 1 tsp garam masala
- 1 tsp ginger, peeled and finely grated
- 2 garlic cloves, peeled and crushed
- 2 tsp mild or medium chilli powder
- 1/4 tsp turmeric
- 250 ml / 9 fl oz chicken stock
- 1/2 tin (7 oz/200 ml) reduced-fat coconut milk
Fresh Herb-Marinated Lamb Kebabs

- 1/4 cup fresh lemon juice
- 3 tbsp chopped fresh mint
- 3 tbsp chopped fresh rosemary
- 3 tbsp chopped fresh oregano
- 3 tbsp chopped fresh thyme
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp salt
- 1 tsp black pepper
- 3 garlic cloves, minced
- 1 1/2 lbs lamb tenderloin, cut into 2-inch pieces
- 2 red onions, cut into chunks
