Ginger Chicken Udon

Oh yum, yum, yum! The ginger chicken udon at Wagamama is one of their most popular meals
- 7 ounces udon noodles
- Handful mangetout, finely sliced
- 1/2 red onion, peeled and thickly sliced
- 4 spring onion, trimmed and cut into 2.5 cm / 1 inch lengths
- 1 garlic clove, minced
- 1 tablespoon fresh ginger root, peeled and grated
- 2 tablespoons coriander, roughly chopped
- 1 red chilli, deseeded and finely sliced
- 2 handfuls beansprouts
- 2 to 3 eggs, beaten
- Pinch sugar or sweetener
- Pinch salt
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 1/2 tablespoons fish stock
- 10.5 ounces boneless, skinless chicken thighs, cut into small strips (300g)
- 2 teaspoons pickled ginger
- Sprigs of coriander, chopped fresh
Hamburger Soup

Very flavorful and simple crockpot soup
- 500 g very lean minced beef
- 1 cup thinly sliced carrots
- 1 cup sliced celery
- 1 package dry onion soup mix
- 1 package dried Italian salad dressing herb mix
- 3 cups boiling water
- 3 large tomatoes, chopped
- 1 cup passata with basil
- 1 tbsp soy sauce
- 1 to 1.5 cups dried pasta

This northern Indian dish of spiced minced beef and peas is delicious and healthy
- 2 garlic cloves, peeled and crushed
- 2 fresh green chillies, deseeded and chopped fine
- 2 tsp ground coriander
- 2 tsp ground cumin
- 500 g / 1 lb 2 oz extra lean minced beef
- 150 g / 5 oz frozen peas
- 2 tbsp curry powder
- 1/4 cup tomato sauce or passata
- 4 large ripe tomatoes, finely chopped
- 1/4 tsp artificial sweetener
- 250 ml / 9 fl oz hot beef stock made with Bovril
- 2 tbsp non-fat plain yogurt
- Large handful of freshly chopped coriander leaves
Bandh Gobi Bhuna

- 2 tsp cumin seeds
- 2 tsp fennel seeds
- 1 onion, peeled, halved and very thinly sliced
- 1 large green cabbage, halved, cored and finely shredded
- 1/2 tsp mild chilli powder
- 1/2 tsp garam masala
Chickpea Patties with Yogurt Dressing

This is effectively a healthy, low-fat twist on falafel
- Yogurt Dressing:
- 1 400 g can chickpeas, rinsed
- 1/2 cup fresh flat-leaf parsley
- 1 clove garlic, minced
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1 tbsp flour (wholemeal if desired)
- cooking spray
- 1/2 cup non-fat yogurt (Greek if available)
- 3 tbsp fresh lemon juice
- salt and pepper
Griddled Mango Chicken with Coleslaw

- For the coleslaw:
- 4 chicken breasts, skinless and boneless
- 1/4 tsp smoked paprika
- 1 tbsp lemon juice
- 1 ripe mango, peeled and coarsely grated
- 2 tbsp chopped coriander
- 3 tbsp lime juice
- 1/2 white cabbage, shredded
- 2 large carrots, peeled and grated
- 1 small red onion, peeled and thinly sliced
- 1 tbsp white wine vinegar

- 1/2 cup sugar
- 1/3 cup flour

- 1 lb lean beef stew meat, cut into cubes
- 4 oz fresh mushrooms, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup beef broth
- 1/2 tsp paprika
- 16 oz nonfat yogurt
- 1 tbsp dijon mustard
- 1 package (12 oz) egg noodles, uncooked
