Creamy Smoked Salmon Bucatini with Dill

Can be made with any smoked fish but salmon is particularly nice
- 6 spring onions, trimmed and finely sliced
- 150 ml vegetable or chicken stock
- 200 g quark
- 2 garlic cloves, minced
- a pinch of nutmeg
- 4 tbsp finely chopped dill
- juice of 1/2 lemon
- 500 g runner beans, thinly sliced
- 350 g dried bucatini or other pasta shapes
- 150 g smoked salmon, cut into small strips
Greek Lamb with Spinach & Artichokes

This can also be made with chicken
- 2 - 2.5 lb boneless lamb shoulder roast
- 1 19-oz can cannellini (white kidney) beans, drained and rinsed
- 1 14-oz can diced tomatoes
- 4 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1 14-oz can artichoke hearts, drained and quartered
- 3 cups fresh baby spinach
- 3 cups hot cooked orzo
- Crumbled feta cheese (optional)
Easy Chai Tea

Worth the effort if you love the sweet and milky flavors of chai tea lattes
- 16 cardamom seeds
- 16 whole cloves
- 8 black peppercorns
- 4 cinnamon sticks
- 2 1-inch pieces fresh ginger, sliced
- 4 cups skimmed / nonfat milk
- 8 bags black tea
- Sugar or sweetener, to taste (approximately 2 spoons equivalent per cup)
Quick Tomato and Red Pepper Soup

Really delicious soup especially with the yogurt
- 500 g passata with basil
- 400 g can chopped tomatoes
- 1 medium onion, peeled and finely chopped
- 3 medium carrots, peeled and finely chopped
- 1 red pepper, deseeded and finely chopped
- 284 ml / 1/2 pt vegetable stock
- 1 tsp artificial sweetener
- salt and freshly ground pepper
- 400 g can chick peas, drained
- 142 g / 5 oz nonfat natural yogurt
- zest and juice of 1/2 small lemon
- a large handful of fresh basil, chopped
- a large handful of fresh coriander, chopped
Stuffed Peppers

- 4 large peppers
- 1 vegetable stock cube (such as OXO)
- 1/2 tsp mixed herbs
- 1 onion
- 230g cous cous
- 4-6 large mushrooms
- 2 garlic cloves, minced
- 350g Quorn mince or minced beef
- 2 tsp cumin
- 28g grated low-fat cheese
Black Bean-Tomato Soup with Cilantro-Lime Cream

Really yummy soup. The bacon makes it quite salty so no extra salt is needed
- 2 center-cut bacon slices, chopped
- 1/2 cup chopped onion (about 1 small)
- 1/4 cup chopped celery
- 1 teaspoon ground cumin, divided
- 1/2 teaspoon chipotle chile powder
- 1 garlic clove, minced
- 1/4 teaspoon freshly ground black pepper
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (14.5-ounce) can chopped tomatoes
- 1 (14-ounce) can fat-free, less-sodium chicken broth (or water and 1 OXO cube)
- 1/4 cup reduced-fat sour cream
- 1 tablespoon minced fresh cilantro
- 1/2 teaspoon grated lime rind
- 1 tablespoon fresh lime juice
Red Lentil-Pumpkin Soup

Heat a large Dutch oven over medium-high heat
- 1 chopped onion
- 1 teaspoon minced garlic
- 3 1/2 cups vegetable stock, divided
- 1 cup dried red lentils
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground pepper
- 1 cup water
- 1 tin canned pumpkin
- 1 tablespoon grated peeled fresh ginger (or 2 cubes frozen ginger)
- 1 tablespoon fresh lemon juice

- 3 large baking potatoes, sliced into 1/4 inch slices
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 pound ground lamb, lean
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 cup tomato sauce or passata
- 1 tsp salt
- 1 tsp ground cumin
- 1/2 tsp ground pepper
- 1/2 tsp ground cinnamon
- 1/2 cup chopped fresh flat-leaf parsley

- 1 large carrot, diced

- 2 tomatoes, chopped

- 1 red pepper, deseeded and chopped

- 400 g / 14 oz passata with herbs and garlic
