Provençale Chicken Supper

This is a simple slow-cooker dish and lovely served with either cooked penne or mashed potato
- 4 skinless, boneless chicken breasts or 8 boneless, skinless chicken thighs, chopped into pieces
- 2 teaspoons dried basil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup diced yellow bell pepper
- 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
- 1 (14 1/2-ounce) can chopped tomatoes
- 1 tsp italian herbs
Turkey, Broccoli and Pasta Gratin

Good use for leftover Thanksgiving turkey
- 170 g / 6 oz dried pasta shapes
- 225 g / 8 oz broccoli florets
- 2 sticks celery, thinly sliced
- 340 g / 12 oz cooked turkey breast, cut into bite sized pieces
- 511 ml / 18 fluid oz passata with herbs
- 2 garlic cloves, peeled and crushed
- 1-2 tsp dried mixed herbs
Pear & Chocolate Crumble

This is a simple but delicious dessert, nice with white chocolate chips as well as dark chocolate ones
- 4-5 ripe pears
- 100 g brown sugar
- 100 g chocolate chips
- 100 g flour
- 100 g sugar
- 75 g butter, chilled and diced
Lamb Rogan Josh

Very healthy lamb rogan josh recipe
- 1 onion, peeled and chopped
- 3 garlic cloves, peeled and minced
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp ground ginger
- 1 tsp chilli powder
- 450 g / 1 lb lamb steak, all visible fat removed and cut into pieces
- 400 g tin chopped tomatoes
- 1 bay leaf
- 2 cinnamon sticks
- 4 cardamom pods
- 3 cloves
- 198 ml / 7 fl oz chicken stock
- 2 tsp artificial sweetener
- Handful fresh coriander, chopped
Lamb Curry with Chickpeas

Delicious healthy curry. Adapted this so that it's only 5 syns for the whole recipe (raisins)
- 2 inch piece of ginger, minced
- 4 garlic cloves, minced
- 1 3/4 tsp garam masala (Indian Spice Blend)
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 1.5 pounds lean lamb steaks, cubed
- 1 butternut squash, cubed, or 2 bags sweet potato and butternut squash combo
- 1 15-oz can chickpeas, drained and rinsed
- 1 cup water
- 2 small boxes raisins (about 1/4 cup)
- 2 tsps salt
Thai Chicken with Basil

Cook chicken 3 minutes each side in a skillet with Fry Light
- For the chicken:
- 4 chicken breasts, skinless and boneless
- 1/4 tsp. pepper
- 2 large shallots, thinly sliced
- 1 jalapeño pepper, seeded and finely chopped
- 3 cloves garlic, finely chopped
- 1 tbsp soy sauce
- Juice of 1/2 lime
- 1 tsp sugar or Splenda
- 1 cup chicken broth
- 1/2 cup fresh basil, chopped
- For the noodles:
- 1 package of rice or ramen noodles
- 2 cups chicken broth
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/4 tsp english mustard
- 1 tbsp soy sauce
- 1/4 tsp red pepper flakes
Sweet potato and chickpea curry

You can whip up this easy chickpea curry with just a few store cupboard staples - perfect for a laid-back supper
- 1 tbsp cumin seeds
- 1 onion, finely sliced
- 2 garlic cloves, minced
- 1/2-1 tsp chilli flakes (to taste)
- 50 g/1 3/4oz root ginger, peeled and grated
- 600 g/1lb 5oz tinned chickpeas
- 400 g/14oz tin tomatoes
- 750 g/1lb 10oz sweet potato, peeled and cut into bite-sized cubes
- 200 g/7oz rice
Turkey Meatballs with Herbed Tagliatelle

Place the turkey, garlic, cumin and cinnamon in a bowl and using your hands, mix well until combined
- For the herbed tagliatelle:
- 500 g / 1 lb 2 oz lean minced turkey
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 2 tsp ground cinnamon
- 1 small onion, peeled and finely chopped
- 1 garlic clove, minced
- 1 carrot, peeled and finely chopped
- 2 sticks celery, finely chopped
- 2 x 400g cans chopped tomatoes
- 340 g/12oz dried tagliatelle
- 6-8 tbsp finely chopped mixed herbs (eg parsley and tarragon)

- 2 medium eggs
- 3-4 large bananas, overripe is fine
- 2/3 cup sugar
- 1/3 cup butter, melted
- 1 3/4 cup flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
Lancashire Hotpot

- 4 large potatoes, sliced 1/4-inch thick
- 6 baby onions, peeled and left whole
- 1 tablespoon thyme, chopped
- 1 kg lean cubed lamb steak (or lamb chops whole, if desired)
- 2 tablespoons Worcestershire sauce
- 125 ml beef stock
- 1 handful flat-leaf parsley, chopped
