Preheat oven to 200 degrees C/ 400 degrees F
- 1 lb / 454 g butternut squash, diced
- 420 g can butter beans, drained
- 250 g pack button mushrooms
- 2 tomatoes, chopped
- 1 tsp dried thyme leaves

- 4 garlic cloves, chopped fine
- 1 cup chopped green pepper
- 2 (35 oz) cans stewed tomatoes, crushed
- 2 (15 oz) cans kidney beans, drained
- 2 tbsp tomato paste
- 3/4 cup chicken or turkey stock
- 2-3 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp dried hot red pepper flakes
- 1 teaspoon dried oregano
- 1 tbsp salt
- 1/2 teaspoon black pepper
- 3 to 4 cups of shredded, cooked chicken or turkey meat
- Artificial Sweetener
- Shredded cheddar cheese, chopped red onion, sour cream for optional garnish.

- 50 g/2oz golden caster sugar
- 5 tbsp artificial sweetener
- 150 g/5oz self-raising flour
- 1 tsp baking powder
- 2 tbsp finely grated orange zest
- juice of 2 oranges
- For the syrup
- zest of 2 oranges, finely grated into long strips
- juice of 2 oranges
- 1 tbsp arrowroot
- 4 tbsp Splenda Brown Sugar Blend

Butternut Squash & Bacon Risotto

Comfort food at its most delicious, but healthy too
- 1 leek, washed and finely chopped
- 198 g / 7 oz lean bacon, cut into bite-sized pieces
- 4 garlic cloves, minced
- 255 g / 9 oz dried risotto rice
- 397 g / 14 oz butternut squash, cubed (or use a bag of fresh cubed sweet potatoes and butternut squash if available)
- 850 ml / 1.5 pints boiling hot chicken stock
- 4 tbsp finely chopped chives

Combine all ingredients in a slow cooker
- 8 low-fat pork sausages
- 6-8 med potatoes, cut in chunks
- 5 large carrots, cut into large bite sized pieces
- 1 large white onion, sliced thin
- 1 med red onion, sliced thin
- 1 tablespoon mixed herbs (or rosemary and basil)
- 1 teaspoon English mustard
- 1 teaspoon cumin
- 1 teaspoon coriander
- 3 cloves garlic
- 1 tablespoon Worcestershire sauce
- 3/4 cup passata
- 600 ml chicken stock (or 600 ml water + 3 Chicken OXO cubes)
Sweet Potato Chicken Curry

- 2 tsp mild curry powder
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 large chicken breasts, skinless and boneless, cubed
- 1 large onion, thinly sliced
- 2 tsp minced peeled fresh ginger
- 2 garlic cloves, minced
- 350 ml chicken broth
- 1 400 g / 14 oz can chopped tomatoes
- 2 cups cubed peeled sweet potato
- 1 400 g can chickpeas, rinsed and drained
- 1/2 cup frozen green peas
- 1 tbsp fresh lemon juice
