- 1 medium red onion, peeled and finely chopped
- 2 garlic cloves, minced
- 1 medium tomato, finely chopped
- 170 g / 6 oz mushrooms, finely chopped
- 390 g can artichoke hearts, quartered
- 600 g chicken breasts, sliced into large slices
- Pinch of dried chilli (optional)
Piquant Herb Sauce

Nice sweet herb sauce, that tastes great with fish
- 1 level tbsp clear honey
- 1 level tsp Dijon mustard
- 142 g / 5 oz nonfat plain yogurt
- 2 garlic cloves, crushed
- 2 tbsp capers, drained
- 1 tbsp white wine vinegar
- Handful fresh flat-leaf parsley
- Handful fresh basil
Sweet Potato and Red Pepper Soup

- 1 onion, chopped
- 1 garlic clove, minced
- 2 red peppers, chopped
- 1/4 tsp Italian herbs
- 1 tsp paprika
- 1/2 tsp chili flakes
- 2 sweet potatoes, peeled and chopped
- 420 g tin chopped tomatoes
- 6 fresh cherry tomatoes
- 1/2 pint vegetable stock

Thai Crab Cakes

Really delicious crab cakes, and can be a main or a starter
- 397 g / 14 oz potatoes, peeled and roughly chopped
- 2 garlic cloves, minced
- 6 spring onions, finely sliced (optional)
- 2 tbsp each of finely chopped coriander, mint and lemongrass
- 1 red chilli, deseeded and finely chopped
- 1/4 tsp finely grated ginger
- 397 g / 14 oz canned white crab meat, drained
- 4 level tbsp extra light mayonnaise
- lime halves, to serve
Spicy Beef and Noodle Soup

Nice and easy soup, not too spicy
- 300 g / 10.5 oz lean rump beef, cut into thin strips
- 1 litre (1 3/4 pints) beef stock
- 2 lemongrass sticks, tough outer leaves removed, chopped
- 2 red chillies, deseeded and diced (or 1 frozen red chilli cube)
- Juice of 2 limes
- 125 g / 4.5 oz dried thread egg noodles
- 110 g / 4 oz mange tout
- 110 g / 4 oz baby corn
Fast-fix Healthy Fried Rice

Heat a non-stick frying pan coated with cooking oil, then tip in the egg
- 2 egg , beaten
- 4 rashers bacon , chopped
- 300 g mushrooms , sliced
- 400 g frozen peas
- 2 garlic clove , crushed
- 2 inches fresh root ginger , grated (or 2 cubes frozen ginger)
- 4 tsp soy sauce , plus extra to serve
- 2 tsp sweetener (or sugar)
- 500 g cooked basmati rice

- 200 g/7 oz new potatoes, scrubbed
- 2 courgettes, thickly sliced
- 4 flat mushrooms, thickly sliced
- 2 tsp dried oregano
- 400 g can chopped tomatoes with herbs

Sausage & Sweet Potato Gratin

- 750 g / 1 lb 11 oz sweet potatoes, peeled and cut into chunks
- 1 onion, chopped
- 1 clove garlic, crushed
- 8 low-fat sausages (Joe's Sausages, for example)
- 400 g tin chopped tomatoes
- 400 g tin cannellini beans, drained and rinsed
- 100 ml / 4 oz tomato passata
- 1 tbsp fresh rosemary, chopped
- 2-3 tbsp low-fat cheddar cheese, grated
