Chicken-Butternut Tagine

One of the best recipes I have made in the past couple of months--this is a yummy and healthy tagine and nice alter...
- 1 large onion
- 2 tsps ground cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp ground ginger
- 2 garlic cloves, minced
- 3 large chicken breasts, cut into bite-sized pieces
- 4 1/2 cups butternut squash and/or sweet potatoes, cubed (or use 1 bag pre-cubed fresh squash and sweet potato)
- 2 cups chicken stock
- 8 pitted dried plums, chopped
Mushroom & Bacon Penne

Very easy after work pasta
- 100 g baby leaf spinach, roughly chopped
- 312 g dried penne
- 200 g bacon rashers, all visible fat removed, roughly chopped
- 1 onion, finely chopped
- 198 g baby button mushrooms, halved
- 142 g cherry tomatoes, halved
- 3 garlic cloves, minced
- 4 tbsp fat free fromage frais
- Salt and pepper
Pork Chops & Rice Oven Dinner

Preheat oven to 350F. Heat cooking spray in an oven-safe skillet until shimmery on medium high
- 4 thin-cut bone-in pork chops, about 1-1/4 pounds
- Salt & pepper to taste
- 1/2 cup rice
- 4 onion slices
- 4 rings of green pepper
- 4 tomato rounds
- 1-1/2 cups broth (chicken, beef, vegetable)
- Generous salt & pepper
Carrot, Sweet Potato and Red Lentil Soup

Smooth, creamy sweet potato soup
- 1 onion, chopped
- 2 garlic cloves, minced
- 250 g carrots, peeled and roughly chopped
- 250 g-500g sweet potato, peeled and roughly chopped
- 1/2 tsp ground cumin
- 100 g red lentils
- 1 litre vegetable or chicken stock (if using OXO cubes, use 3 for 1 litre of water)
Beef Chilli Con Carne

Add all ingredients to a crockpot and heat on high for 3-5 hours or low for 5-6 hours
- 1 onion, peeled and finely chopped
- 3 garlic cloves, minced
- 1.5 tsp ground cinnamon
- 2 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp mild chill powder
- 450 g / 1 lb extra lean minced beef
- 1 red pepper, deseeded and chopped
- 1 green pepper, deseeded and chopped
- 200 g mushrooms, sliced
- 400 g can red kidney beans, drained
- any variety of rice (to serve)
Noodle Hot Pot with Seven Vegetables

A slight variation on a recipe from the wagamama cookbook, made without oil and great served with grilled salmon
- 2 small pak choi, quartered lengthwise
- 75 g broccoli, cut into small florets
- 50 g rice noodles
- 150 ml chicken stock
- 2 tbsp mirin or sushi rice seasoning
- 3 tbsp soy sauce
- 2 tsp sweetener (or sugar if preferred)
- 1 garlic clove, minced
- 2 cm piece fresh ginger, minced
- 1 red chilli, chopped
- Handful of finely shredded cabbage
- Handful of mange tout
- 2 carrots, thinly sliced
- 1 small courgette, thinly sliced
- 4 shiitake mushrooms, thinly sliced
- Handful of coriander leave s (optional)
Chocolate-Hazelnut Banana Bread

- 5 tablespoons chocolate-hazelnut spread (such as Nutella)
- 3 tablespoons plus 1 teaspoon canola oil, divided
- 3 tablespoons butter, softened
- 1/2 cup packed brown sugar
- 2 medium ripe bananas, sliced
- 2 large eggs
- 1 1/2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup whole buttermilk

Richard made this for me tonight for dinner
- 4-5 jacket potatoes, peeled and cubed
- 2 courgettes, chopped
- 1 red pepper, deseeded and chopped
- 1 aubergine, chopped
- 1 red onion, chopped
- 6 fl oz / 170 ml vegetable stock
- 1/2 pint / 285 ml passata
- 400 g skinless chicken mini fillets
- 1 tbsp capers, drained
- 2 oz / 57 g watercress, chopped
Curried Lentils With Sweet Potatoes and Swiss Chard

1. In large saucepan, heat cooking spray over medium heat
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 1-inch piece fresh ginger root, peeled and grated
- 1 1/2 teaspoons garam masala
- 1 1/2 teaspoons curry powder
- 1 jalapeño pepper, seeded if desired, then minced
- 4 to 5 cups vegetable broth as needed
- 2 pounds sweet potatoes, peeled and cut into 1/2-inch cubes (about 4 cups)
- 1 1/2 cups dried lentils
- 1 bay leaf
- 1 pound Swiss chard, center ribs removed, leaves thinly sliced
- 1 teaspoon salt, more to taste
- 1/2 teaspoon ground black pepper
- 1/3 cup chopped fresh cilantro
- Finely grated zest of 1 lime
- Juice of 1/2 lime
- 1/4 cup chopped scallions, for garnish.
Baked Portuguese Cod with Sweetcorn Mash

Really easy and nice fish recipe
- For the sweetcorn mash:
- 6 medium tomatoes, chopped
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- Juice of 1 lemon
- 4 thick fillets or steaks of cod, skin removed
- 600 g potatoes, peeled and cubed
- 2 tbsp skimmed milk
- 2 small tins sweetcorn, drained (or equivalent frozen corn)
