  • 600 ml / 1 pint vegetable stock
  • 1 large onion, sliced finely
  • 1 garlic clove, minced
  • 4 celery sticks, sliced finely
  • 1-2 carrots, peeled and thinly sliced
  • 2 courgettes, sliced finely
  • 2 x 400g cans chopped tomatoes
  • 75 g spaghetti, broken into short lengths
  • 5 cm (2 inch) strip of orange rind
  • 400 g can cannellini beans, drained
  • 125 g fresh spinach (or frozen, approximately 3 "balls" of frozen spinach)
  • 1 tsp dried thyme
