Sicilian Country Soup

Delicious and thick healthy soup
- 600 ml / 1 pint vegetable stock
- 1 large onion, sliced finely
- 1 garlic clove, minced
- 4 celery sticks, sliced finely
- 1-2 carrots, peeled and thinly sliced
- 2 courgettes, sliced finely
- 2 x 400g cans chopped tomatoes
- 75 g spaghetti, broken into short lengths
- 5 cm (2 inch) strip of orange rind
- 400 g can cannellini beans, drained
- 125 g fresh spinach (or frozen, approximately 3 "balls" of frozen spinach)
- 1 tsp dried thyme

- 112 g Spanish Chorizo
- 150 g frozen scallops
- 1 red onion, roughly chopped
- 1 red pepper, finely sliced

- 1 kg lean braising steak, cubed
- 1 onion, chopped
- 2 garlic cloves, minced
- 2-3 tbsp ginger, minced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp harissa paste (or a pinch of chilli powder)
- 650 ml beef stock
- 1/2 cup or 12 dried prunes, chopped
