- 2 cups half-and-half cream

- 1/4 teaspoon ground nutmeg
- 1/4 cup cornstarch
- 1/4 cup cold water or additional chicken stock
- 2-1/2 cups (10 ounces) shredded cheddar cheese
- 1/2 teaspoon salt
