Salsa Chicken

Good way to use your home-made salsa!!
- 4 skinless, boneless chicken breast halves
- 4 teaspoons taco seasoning mix
- 1 cup salsa
- 1 cup shredded Cheddar cheese
- 2 tablespoons sour cream (optional)
Loaded Smashed Taters

Use baby Yukon Golds as skins are thin and easy to mash
- 2 1/2 lbs. baby Yukon Gold potatoes
- 1 cup 2% milk, warmed
- 1/2 cup spreadable cream cheese (any flavor)
- 3 T. butter, softened
- 1 lb. bacon strips, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Parmesan cheese
- 3 green onions, chopped
- 1/3 cup oil-packed sun-dried tomatoes, chopped
- 2 t. dried parsley flakes
- 1/4 t. salt
- 1/4 t. pepper
Stuffed Tomatoes with Grits and Ricotta

Combine grits, water and 1/2 teaspoon salt in a small saucepan
- 1/2 cup dry grits
- 1 1/2 cups water
- 1 t. salt
- 2 eggs
- 1 1/2 cups ricotta cheese
- 1/3 cup grated parmesan cheese
- 1/2 cup grated Asiago cheese
- 1 t. garlic powder
- 1/4 cup chopped fresh parsley
- 1/4 cup crushed red pepper
- 8 tomatoes (about 6 ounces each
Maple Butter Twists

1. In a large bowl combine warm water and yeast; set aside for 5 minutes 2
- 1/4 cup warm water (105 degrees F to 115 degrees F)
- 1 packet active dry yeast
- 1/2 cup milk
- 1/4 cup butter
- 3 Tbsp. granulated sugar
- 1-1/2 tsp. salt
- 2 eggs
- 3-1/4 to 3-1/2 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1/3 cup granulated sugar
- 1/4 cup butter, softened
- 1/4 cup pure maple syrup
- 2 Tbsp. all-purpose flour
- 1/2 tsp. ground cinnamon
- 1/2 tsp. maple flavoring (optional)
- 1/2 cup chopped walnuts, toasted
- 1 cup powdered sugar
- 3 to 4 tsp. water
Spiced Cherry Cheese Ball

1. Mix cream cheese and cheddar until blended
- 1 pkg. softened cream cheese (8 ounce)
- 1 package (10 ounce) Cracker Barrel Cermont Sharp White cheddar cheese, shredded
- 1/2 cup dried cherries, chopped
- 1/4 t. pumpkin pie spice
- 1/2 cup finely chopped pecans, toasted
- Ritz crackers
Parmesan Crisps

Preheat oven to 400 degrees F
- 1 cup shredded Parmesan
- 2 tablespoons shredded basil leaves
- 1/2 tablespoon grated lemon zest
Christmas Queso

Add the cheese to a saucepan and melt over medium heat
- 2 pounds queso blanco-style processed cheese, such as Velveeta Queso Blanco, cut in 1/2-inch cubes
- 2 cans diced tomatoes and green chiles, such as Rotel
- 1 jar diced pimientos
- 2 jalapenos, seeded and chopped finely
- Tortilla chips, for serving
Best Tomato Soup Ever

To begin, dice the onion. Melt the butter in a large pot or Dutch oven
- 1 medium white or yellow onion
- 6 tablespoons (3/4 stick) butter
- Two 14.5-ounce cans diced tomatoes
- One 46-ounce bottle or can tomato juice
- 3 to 6 tablespoons sugar
- 1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
- Freshly ground black pepper
- 1 cup sherry, optional
- 1 1/2 cups heavy cream
- 1/4 cup chopped fresh basil
- 1/4 cup chopped flat-leaf parsley

1. Preheat oven to 375 degrees
- 1 cup butter, softened
- 1 cup packed brown sugar

Chicken Scaloppini with Peppers and Mushrooms

The chicken breasts will be easier to slice in half if you freeze them for 15 minutes first
- 3 (6- to 8-ounce) boneless, skinless chicken breasts, trimmed
- Salt and pepper
- 6 tablespoons vegetable oil
- 8 ounces white mushrooms, trimmed and quartered
- 1 red bell pepper, stemmed, seeded, and cut into thin matchsticks
- 1 shallot, sliced thin
