- 1 (6 ounce) package buttermilk cornbread mix
- 1/4 cup butter
- 1 cup finely chopped onion
- 1 cup finely chopped celery
- 1 (10 ounce) can cream of celery soup
- 1 1/4 cups chicken broth
- 2 large eggs
- 1 T. poultry seasoning
- 1/2 t. garlic powder
- Creamed Chicken
- 2 T. butter
- 1/4 cup finely chopped onion
- 1 t. minced garlic
- 1 (1o ounce) can cream of celery soup
- 1 (8 ounce) package cream cheese, softened
- 1 T. minced fresh thyme
- 2 cups chopped cooked chicken

1. Prepare the pan: Adjust oven rack to middle position and heat oven to 425 degrees
- 1 butternut squash (about 2 1/2 pounds), peeled, halved lengthwise, seeded, and cut into 1-inch chunks

- 1 t. ground coriander
- Boil:
- 1/2 cup low country seasoning
- 4 lemons, halved
- 2 T. salt
- 12 oz. beer
- 6 quarts water
- 1 lb. yellow onion, roughly chopped
- 8 cloves garlic, peeled
- 2 lbs. new potatoes, halved
- 4 ears corn, halved
- 3 - 4 pounds shrimp, shell on
- 1 - 2 pounds andouille or kielbasa sausage
- 1 pound lump crab
- 1 - 2 pounds crawfish

- 1 2-to-3-pound sugar pumpkin
- 8 ounces dried chorizo, diced
- 1 jalapeno pepper (remove seeds for less heat), chopped
- 1 4-ounce can chopped green chiles
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3 tablespoons all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 2 cups shredded mozzarella or Oaxaca cheese
- 1 cup shredded monterey jack cheese
- Chopped fresh cilantro, for topping

For the vinaigrette, whisk together all ingredients in a small bowl; season with salt and pepper and set aside
- Vinaigrette, whisk:
- 1/2 cup extra virgin olive oil
- 1/4 cup dry white wine
- 1/4 cup white wine vinegar
- 3 T. Dijon mustard
- 2 T. minced shallots
- 2 t. minced garlic
- Salt and black pepper to taste
- For the Salad, cover:
- 3 lb. red or yellow new potatoes, cut into 1--inch wedges
- 1 lb. green beans, trimmed, halved crosswise
- Cook:
- 6 strips bacon, diced
- 1/2 cup chopped scallions
- 2 T. minced fresh tarragon
