Paella with Poblanos, Corn, and Clams

The part of paella I couldn't dare change is the socarrat—the crisp browned rice on the bottom of the pan
- 2 tablespoons olive oil
- 2 cups chopped yellow onion
- 3 garlic cloves, minced
- 2 poblano chiles, seeded and chopped
- 1 1/4 teaspoons kosher salt, divided
- 1/2 teaspoon black pepper, divided
- 3/4 cup uncooked short-grain brown rice
- 1/4 teaspoon saffron threads, crushed
- 2 cups water
- 1/8 teaspoon ground red pepper
- 1 1/2 cups fresh corn kernels (about 2 ears)
- 1 cup halved cherry tomatoes
- 2 pounds littleneck clams
- 2 tablespoons chopped fresh flat-leaf parsley
- 8 lemon wedges
Savory Baked Brie

Can also use Camembert
- 1 8oz or 2 6oz wheels of brie cheese
- 1/2 cup roasted garlic jam (can be a blend like roasted garlic onion)
- 1/2 teaspoon rosemary, finely chopped
- 2 tablespoons walnuts or pecans, finely chopped (optional)
- Crackers, apple wedges, crusty bread, whole walnuts, etc for serving
Healthy Gingerbread People

From Whole Foods to your healthy holiday kitchen
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole-wheat pastry flour
- 1/4 teaspoon sea salt
- 3/4 teaspoon baking soda
- 1 tablespoons ground ginger
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 8 tablespoons unsalted butter, room temp
- 1/2 cup sugar
- 1 large egg
- 2/3 cup molasses
Multigrain Waffles

In large bowl, combine first seven ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup cornmeal
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 4 egg whites
- 3 cups buttermilk
- 1/2 cup unsweetened applesauce
- 3 tablespoons canola oil
- 2 tablespoons butter, melted
- Toppings: butter, maple syrup, confectioners' sugar, fruit, etc
Leek and Celery Root Soup

Melt butter in dutch oven or heavy bottom stock pan over medium low heat
- 3 tablespoon margarine
- 2 medium leeks, cleaned & cut into thin 1/2 moons
- 1 medium yellow onion, thinly sliced
- 1 teaspoon salt
- 1 1/2 lb celery root, peeled and cut into thin strips
- 5 cups water or stock
- pepper and additional salt to taste

- 1 1/2 cup graham cracker crumbs
- 1/2 cup butter or margarine, melted
- 1 14 oz can sweetened condensed milk
- 2 cups (12 oz) chocolate chips
- 1 1/3 cup flaked coconut
- 1 cup chopped nuts, optional

- My favorites are:
- 3 cups (18 oz) chocolate chips (choose white, peanut butter semi-sweet, dark, etc)
- 1 14oz can sweetened condensed milk
- 1 teaspoon extract (choose vanilla, coconut, raspberry, lemon, rum, almond, etc)
- Coatings - finely chopped & toasted nuts, flaked coconut, powdered sugar, unsweetened cocoa, colored sugars, sprinkles/jimmies
- White chips with lemon extract
- Peanut butter with almond
- dark with raspberry
Chocolate Silk Pie

My all time favorite pie, well, maybe it ties with custard!
- Crust:
- 1 1/2 cups finely crushed chocolate sandwich cookies
- 1/4 cup butter, melted
- Filling:
- 1 cup sugar
- 3/4 cup butter, softened
- 3 1 oz squares semisweet baking chocolate, melted, cooled
- 3/4 cup egg substitute
- Garnish:
- Whipped cream in aerosol or pipping tube
- Chocolate curls
Spiced Vanilla Cookies

Keep dough portions chilled and work one portion at a time for the best results
- 10.1 oz all-purpose flour (about 2 1/4 cups)
- 1 Tbsp ground cinnamon
- 1/2 tsp grated nutmeg
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 3 Tbsp butter, softened
- 2 Tbsp canola oil
- 1/4 cup light-colored corn syrup
- 1 Tbsp vanilla extract
- 1 large egg white
Penne with Sausage and Roasted Peppers

To cut a step buy roasted red peppers in water
- 5 red bell peppers
- 4 tablespoons olive oil, divided
- 2 onions, diced
- 3 tablespoons minced garlic
- 8 links sweet sausage, removed from casing (use hot to up the spice)
- 2 tablespoons fresh rosemary, chopped
- 1 14-oz can plum tomatoes, roughly crushed
- salt & pepper to taste
- 1 pound penne, cooked al dente
- Parmesan cheese, grated (optional)
