Leeks au Gratin

Heat oven to 325 degrees. Grease bottom & sides of shallow 2 quart casseroles
- 8 medium leeks with tops (about 3lbs)
- 2 tablespoons butter
- 2 tablespoons plus 2 teaspoons flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/3 cups milk
- 1 cup shredded Gruyere cheese (4 oz)
- 1/4 cup dry bread crumbs
- 2 teaspoons butter, melted
Apple Pecan Sticky Buns

Breakfast, dinner, dessert these yummy Rachel Ray treats will please
- 2 tart apples, granny smith for example, peeled/cored/sliced 1/4 thick
- 1 1/4 cups plus 1 tablespoon packed light brown sugar
- 1 1/2 sticks butter, softened
- 2 cups flour
- 1/4 cups granulated sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 1 cup heavy cream
- 1 cup chopped pecans
- 1/2 teaspoon ground cinnamon
- 2 tablespoons honey
Lemon Chiffon Cake

- Cake:
- 2 cups flour
- 1 1/2 cups granulated sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 tablespoon grated lemon zest
- 7 large egg yolks
- 1 cup (about 8) large egg whites
- 1/2 teaspoon cream of tartar
- Glaze:
- 1/2 cup unsalted butter
- 2 cups confectioners' sugar
- 1/2 teaspoon grated lemon zest
- 2 to 4 tablespoons lemon juice, warmed
- yellow food coloring (optional)
- Lemon jellies slices & mint or lemon zest for garnish (optional)
Bread Sauce

My Brit's favorite holiday dinner must have
- 2 1/2 cups milk
- 1/2 onion, studded with 3-4 cloves
- 1 bay leaf
- 1 thyme sprig
- 3 celery leaves
- 4 parsley stalks
- 2 cloves garlic, crushed
- 1 1/3 cups fresh white bread crumbs
- grated fresh nutmeg
- 2 1/2 tablespoons whipping cream or 3 tablespoons unsalted butter (optional)
Shrimp Fried Rice

Whisk the eggs with a pinch of salt in a small bowl
- 2 large eggs
- Kosher salt
- 2 tablespoons vegetable oil
- 1 1/2 tablespoons low-sodium soy sauce
- 1 teaspoon sesame oil
- 1/2 pound medium shrimp, peeled, deveined and cut into pieces
- 1 tablespoon minced peeled ginger
- 4 ounces fresh or frozen snow peas (thawed, if frozen), halved
- 1 cup shredded carrots
- 1 bunch scallions, chopped
- 3 cups cooked white rice
Raspberry Fool

- 1 1/2 cups vanilla nonfat yogurt
- 1 (10 oz) pkg frozen raspberries, thawed
- 1/3 cup confectioners' sugar
- 1/4 cup well-chilled heavy cream
- 4 ladyfinger cookies
- Fresh raspberries for serving
Rigatoni With Braised Giblet Sauce

- 1/2 cup diced pancetta (about 6 ounces)
- Giblets and neck from your turkey
- 1 medium onion, chopped
- 1/2 to 1 teaspoon red pepper flakes
- 2 tablespoons tomato paste
- 6 cloves garlic, sliced
- 3 bay leaves
- 1 teaspoon chopped fresh rosemary
- Kosher salt
- 1 cup dry white wine
- 2 28-ounce cans whole San Marzano tomatoes
- 1 piece parmesan rind (optional), plus shaved cheese for topping
- 1/2 cup chopped fresh parsley
- Freshly ground pepper
- 1 pound rigatoni
Chicken Tikka

A yummy chicken recipe
- Marinade:
- 4 skinless, boneless breasts cut into 1 inch cubes
- 1/2 teaspoon salt
- 4 tablespoons lemon or lime juice
- vegetable oil for brushing
- 8 wooden skewers (soaked in water)
- 2/3 cup low-fat plain yogurt
- 2 cloves garlic, crushed
- 1 inch of fresh garlic, grated
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Dip: (optional)
- 2/3 cup low-fat plain yogurt
- 1 teaspoon mint jelly
French Onion Soup

- 1 lb parsnips, peeled and cut into medium-size pieces
