Orange Dream Chiffon Cake

Can be made with Lemons instead of oranges if you prefer
- 5 Valencia Oranges (or 7 lemons)
- 2 1/4 cups cake flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 3/4 cups granulated sugar, divided
- 1/2 cup vegetable oil
- 5 large eggs, separated
- 2 large egg whites
- 1/2 teaspoon cream of tarter
- 1 cup heavy cream
Lamb Hotpot

A perfect English meal for a cold winter day
- 1 pound plus 8 oz waxy potatoes, scrubbed & thinly sliced
- 1 pound plus 8 oz lean lamb shoulder chops
- 2 lambs kidneys, prepared & sliced
- 1 large onion, thinly sliced
- 2 tablespoons chopped fresh thyme
- 2/3 cup lamb stock (can substitute vegetable stock if needed)
- 2 tablespoons melted butter
- salt & pepper
Butter Cookies

Great for decorating and using with cookie cutters
- Basic Recipe:
- 2 sticks salted butter, room temperature (margarine/butter substitute won't work)
- 1 extra large egg
- 1 1/4 cups unsifted confectioners sugar
- 2 1/2 cups all purpose flour
- 1 1/2 teaspoons pure vanilla extract
- Variations:
- 1 ) Replace Vanilla with your choice of lemon, almond, or anise extract.
- 2 )Replace confectioners sugar with 1 cup packed brown sugar. Increase vanilla to 2 teaspoons.
- 3 )Replace 1 stick of butter with 1/2 cup creamy peanut butter. Increase vanilla to 2 teaspoons. Reduce flour to 2 cups.
- 4 ) (must be chilled about 1 hour before baking). Replace 1 stick of butter with 4 oz cream cheese and 1 teaspoon of grated orange rind. 1 cup fruit preserves or marmalade.
Whole-Wheat Pancakes

- 3/4 Cup all-purpose flour
- 3/4 Cup whole-wheat flour
- 3 Tablespoons sugar
- 1 Tablespoon baking powder
- 1/2 Teaspoon salt
- 1 1/4 Cup milk
- 1/2 stick melted butter
- 2 Eggs
- A dash of vanilla

I had these at Mesa in Vegas 2 years ago and STILL haven't stopped thinking about them
- FOR THE MASA:
- 24 Dried corn husks
- 4 cup Fresh corn kernels
- 1 1/2 cup Water
- 1 Small red onion (chopped)
- 1 Stick unsalted butter (melted)
- 2 tablespoon Honey
- 4 ounce Yellow cornmeal
- Salt and fresh ground black pepper
- FOR THE ROASTED GARLIC SAUCE:
- 1 tablespoon Canola oil
- 1 small onion (finely diced)
- 1 head garlic (approximately 12 cloves) roasted
- 1 cup Dry white wine
- 3 cup heavy cream
- salt and fresh ground pepper
- FOR THE SHRIMP:
- 1/4 cup Pure olive oil
- 24 Large shrimp (shelled and deveined) Salt and fresh ground pepper
- 1 cup fresh or frozen corn (thawed) roasted garlic sauce (included above)
- 2 tablespoon finely chopped cilantro
- 1 finely diced bell pepper (for garnish)

- 8 ounces cream cheese, at room temperature
- 1 1/4 cups confectioners' sugar, plus more for dusting
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup seedless raspberry jam
- 1/3 cup framboise (raspberry liqueur) or raspberry juice
- 14 Italian-style crisp ladyfingers
- 4 cups raspberries
- Shaved chocolate, for topping

Preheat oven to 375°F. Season roast with salt and pepper
- 4 pound(s) lean whole beef rib(s), trimmed of visible fat
- 1 1/2 tsp table salt
- 1/2 tsp black pepper
- 2 clove(s) garlic clove(s), minced (medium)
- 1/4 cup(s) Dijon mustard
- 2 Tbsp reduced-calorie mayonnaise
- 1 1/2 tsp horseradish sauce
- 1/4 cup(s) parsley, chopped

- 3 strips bacon, cooked
- 3 large leeks
- 1 pound all purpose potatoes, pealed & thinly sliced
- 1 1/4 cup onion, diced

- 1/4 teaspoon pepper
- 5 cups chicken broth
