A great Mexican pizza and it's healthy!
- Pizza:
- 2 tablespoons salsa
- 1 11-inch round pizza crust
- 1 cup low-fat mozzarella, shredded
- 1 4-oz chicken breast, grilled and diced
- 4 tablespoons black beans
- 1/2 red onion, thinly sliced
- Pico De Gallo Topping:
- 1 large tomato, diced
- 1 small green chili, diced
- 1 tablespoon fresh cilantro, chopped
- 1/2 red onion, diced
- salt
- Guacamole Topping:
- 1 large avocado
- 1 tablespoon fresh cilantro, chopped
- 1/2 red onion, diced
- Juice of 1 lime
- Salt & Pepper
Pork Ragu with Pasta

In large skillet hit 1 1/2 teaspoon oil over high heat
- 3 tablespoons vegetable oil
- 2 carrots, peeled & sliced
- 2 rib celery, sliced
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 2 pounds boneless country style pork ribs
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 can (28oz) crushed tomatoes
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound cooked bow tie pasta
- Grated Parmesan cheese (optional)

- 1 2 or 2 1/2lb rotisserie chicken, shredded
- 4 cups baby spinach (about 3 oz)
- 1 1/2 cups grated Monterey Jack (6oz)
- 4 large flour tortillas
- 1 avocado, diced
- 1/2 cup store bought fresh salsa
- 1/4 cup sour cream

- 3 tablespoons canola oil
- 2/3 cup light agave nectar
- 1/2 cup plus 1 tablespoon unsweetened applesauce

- 1 tablespoon pure vanilla extract
- 1 tablespoon apple cider vinegar
- 2 cups light spelt flour, scooped & then leveled
