Cowboy Steak with Coffee and Ancho Rub

A slight hint of sweet comes from behind to make this steak kick
- 1 1/2 tsp ground ancho chile or reg chili powder
- 1 1/2 tsp finely ground espresso coffee
- 1/2 tsp dark brown sugar
- 1/4 tsp dry mustard
- 1/4 tsp ground coriander
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- One 1 1/4 lb shoulder center steak (ranch steak) or top sirloin, about 1 1/4 inch thick
Braised Leeks

In a medium skillet with a lid, heat the oil over medium heat
- 4 lbs of leeks, trimmed, washed and quartered lengthwise
- 1 teaspoon of canola oil
- 1 cup chicken broth
- 2 tablespoons of sugar
Prosciutto Bread

Unroll French bread dough and sprinkle with 1/4 teaspoon pepper
- 1 11-ounce tube refrigerated French bread dough
- 1/4 teaspoon pepper.
- 8 slices prosciutto
- Olive oil to brush bread with (about 4 Tablespoons)
Lemon Garlic Halibut

- 1 onion, sliced
- 2 lbs skinless chicken thighs, in chunks
- 1 tablespoon vegetable oil
- 1/2 pint chicken stock
- 12 oz sweet corn, drained
- 6 tablespoon creme fraiche
- 1 lb 10oz potatoes, cut in chunks
- 2 oz Parsley or Basil leaves, chopped

- 1 tablespoon instant coffee
- 1 teaspoon unsweetened cocoa powder

- Kosher salt
- 1 1 1/4-to-1 1/2-pound skirt steak, cut into 4 pieces

- 12 large unpeeled garlic cloves, divided
- 1 Tbsp chopped fresh rosemary leaves
- Salt & Pepper
- 2 Tbsp butter, melted
- 1 4-5 lb butterflied leg of lamb
- 4-5 lbs small unpeeled potatoes (16-20)
- 2 Tbsp olive oil

Preheat oven to 300°F. Season beef with salt and pepper
- 1 4-pound beef chuck roast, trimmed of fat
- 1/2 teaspoon salt, or to taste
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil, divided
- 2 large onions, halved and thinly sliced (4 cups)
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 3/4 cup strong brewed coffee
- 2 tablespoons balsamic vinegar
- 2 tablespoons cornstarch mixed with 2 tablespoons water
