Smoky Beer Cheddar Cheese Sauce

In a medium saucepan over medium-low heat, melt butter
- 1/4 cup butter
- 1/4 cup flour
- 1 teaspoon garlic powder
- 1 teaspoon ground chile de arbol (can substitute cayenne pepper)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup beer, Belgian style wheat beer (Blue Moon)
- 1/2 cup chicken broth
- 8 ounces mild cheddar cheese, shredded
- 3/4 cup half & half
- 1 teaspoon Worcestershire sauce

- 3-1/2 cups 2% milk
- 1/2 cup uncooked long grain rice
- 1/3 cup sugar

- 1 1/2 cups unsalted butter
- 1 cup Dutch-process cocoa powder
- 3 cups all-purpose flour
- 3 cups granulated sugar
- 2 1/4 teaspoons baking powder
- 1 teaspoon salt
- 3 eggs
- 2/3 cup sour cream
- 16 ounces cream cheese, at room temperature
- 1/2 cup butter, at room temperature
- 7 tablespoons Baileys Irish Cream
- 6 cups powdered sugar

- Vanilla Sauce:
- 3 eggs, beaten
- 1 1/2 cups white sugar
- 2 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup butter, melted
- 3 cups whole milk
- 10 slices hearty farmhouse-style bread, toasted and cut into cubes
- 1 cup raisins
- 1/2 cup light brown sugar
- 1 tablespoon all-purpose flour
- 1 pinch ground cinnamon
- 1 egg
- 2 tablespoons butter, melted
- 1 1/4 cups whole milk
- 1 pinch salt
- 1 tablespoon vanilla
Cherry Chiffon Salad

- DOUGH:
- 1/2 cup honey (125 grams)
- 5/8 cup sugar (125 grams or 10 tablespoons)
- 2 tablespoons butter (25 grams)
- 1 egg yolk
- 5 tablespoons water
- 2 2/5 cup flour (300 grams)
- 1 tablespoon Lebkuchen spice mix or similar
- 2/3 cup ground almonds (50 grams)
- 1/2 teaspoon ammonium carbonate (baker's ammonia or Hirschhornsalz)*
- 1/4 teaspoon potassium carbonate (food grade potash, pearl ash, Pottasche)*
- FILLING:
- 1 cup orange marmalade or apricot jam
- 6 ounce almond paste (not marzipan) (150 grams)
- 1 cup powdered sugar (100 grams)
- 2 tablespoons rum or water
- CHOCOLATE COATING:
