Sugar Cookies like my Mom's

Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2-1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda

Sweet & Sour Meatballs

Delicious appetizer for the holidays, served in a crock pot
- 1 pound ground beef
- 1 egg
- 1/4 cup dry bread crumbs
- 1 onion, diced
- salt & pepper to taste

- 1 c. butter, softened but not to room temperature
- 2 c. flour
- 1/4 c. sugar
- 1/2 c. pecans, chopped in small pieces

- 2 (8oz) packages Philadelphia cream cheese
- 1 c. powdered sugar
- For the Pudding Layer and Topping:
- 2 small packages Jell-O lemon pudding mix

Spicy Pineapple Salsa Recipe

In a large saucepan, bring 8 cups water to a boil
- 12 medium tomatoes (about 4 pounds)
- 2 large red onions, chopped
- 2 medium green peppers, chopped
- 2 cans (8 ounces each) unsweetened crushed pineapple, drained
- 1 can (15 ounces) tomato sauce
- 1 can (12 ounces) tomato paste
- 3 cans (4 ounces each) chopped green chilies
- 2 cans (4 ounces each) diced jalapeno peppers, drained
- 1/3 cup white vinegar
- 2 tablespoons salt
- 6 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 teaspoon pepper

Crock Pot Mongolian Beef

Add sliced flank steak and cornstarch to a large resealable plastic bag
- 1-1/2 pounds thinly sliced flank steak (1/4 inch thick)
- 1/4 cup cornstarch
- 1 tablespoon vegetable oil (or other light flavored oil)
- 3-4 cloves garlic, minced
- 2 teaspoons fresh ginger, minced
- 3/4 cup water
- 3/4 cup reduced sodium soy sauce
- 3/4 cup light brown sugar, packed
- 1 - 2 teaspoons Sriracha sauce (can substitute with red pepper flakes or cayenne instead - in whatever amount you prefer)
- 1 cup shredded carrots
- 4-6 green onions, thinly sliced
