Hawaiian Tortellini Salad

Bring a large pot of water to a boil
- Salad:
- 1 (19 ounce) bag frozen cheese tortellini pasta
- 2 orange bell peppers, cut into bite size pieces
- 1 English cucumber, cut into quarters and sliced
- 1/2 medium red onion, thinly sliced
- 16 ounces cherry tomatoes, halved
- 12 ounces (about 2 heaping cups) diced ham
- 1 (14 ounce) can pineapple tidbits in 100% pineapple juice, divided
- Dressing:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup pineapple juice (reserved from the can of pineapple tidbits)
- 1 tablespoon granulated sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon Gourmet Garden garlic paste or fresh grated garlic
- 2 teaspoons Gourmet Garden Ginger Paste or fresh grated ginger
- 1 teaspoon course ground black pepper

- 1 teaspoon seasoned salt (If you don’t have this on hand, omit it)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon dried dill
Beef Bourguignon With Farfalle

Preheat oven to 450 F. Take your cubed beef and pat them dry with paper towels to remove excess moisture
- 3 pounds stew beef, cubed
- 1 pound farfalle bow-tie pasta
- 2-3 cups beef stock
- 3 cups red wine (cabernet)
- 5 carrots, chopped
- 4 slices bacon, cut into strips
- 4 cloves garlic, minced
- 2 onions, finely chopped
- 2 bay leaves
- 3 tablespoons all-purpose flour
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1/2 teaspoon rosemary
- 1/2 teaspoon cloves
- kosher salt and freshly ground pepper, to taste
Cauliflower Salad

Pour dressing over the vegetables and mix together
- Dressing:
- 1 head cauliflower, cut up
- 2 cups celery, chopped
- 1/2 cup green pepper, chopped
- 1 medium onion, chopped
- 2 cups carrots, grated
- 1 box frozen peas, cooked and drained
- 3/4 cup mayo
- 1 cup sour cream
- 1 pkg. Good Seasons dressing mix
Slow Cooker, Cherry Almond Steel-Cut Oatmeal

Directions Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray
- 3/4 cup dried tart cherries
- 1 apple, peeled and grated (approx. 1 cup grated); or 1/2 cup unsweetened applesauce
- 2 cups unsweetened vanilla almond milk
- 1-1/2 cups water
- 1 cup uncooked steel-cut oats
- 2 tablespoons brown sugar
- 1-1/2 tablespoons butter, cut into 5-6 pieces, optional (omit or substitute margarine for lactose-free, vegan)
- 1/2 teaspoon almond extract
- 1 tablespoon ground flax seed
- 1/4 teaspoon salt
- Optional garnishes: toasted sliced almonds, maple syrup, additional almond milk or butter
Mexican 7 Layer Cream Cheese Dip

In a small bowl, mix together the cream cheese, Greek yogurt, and taco seasoning until smooth
- Two 8-ounce blocks of plain cream cheese, at room temperature (I use 1/3 less fat)
- 3/4 cup plain Greek yogurt (see notes)
- 1 tablespoon taco seasoning
- 15-ounce can of black beans, rinsed and drained (see notes)
- 2 cups of shredded iceberg lettuce
- 1 cup shredded cheddar cheese (or Monterey Jack)
- 1/4 cup pickled jalapeños (see notes)
- 1 cup salsa
- guacamole
- diced avocado
- halved olives
- chopped fresh cilantro
- chopped green onions
Make-Ahead Microwave Breakfast Sandwiches

Preheat oven to 350°F. Whisk together eggs, milk, salt, and pepper in a bowl; stir in bacon and cheese
- 6 large eggs
- 1/2 cup whole milk
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 pound cooked bacon or breakfast sausage, or 8 ounces leftover roasted veggies
- 4 ounces shredded sharp Cheddar, Swiss, or mozzarella (about 1 cup)
