Rhubarb Bread

Preheat oven to 350 degrees F (175 degrees C)
- Bread:
- 1 1/2 cups brown sugar
- 2/3 cup vegetable oil
- 1 egg
- 1 cup buttermilk
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups diced rhubarb
- Topping:
- 1/2 cup white sugar
- 1 tablespoon butter
- 1 teaspoon ground cinnamon

- 4 strips bacon, chopped
- 4 tablespoons (1/2 stick) unsalted butter, plus 4 tablespoons (1/2 stick), at room temperature
- 1 cup chopped onion
- 1 tablespoon minced garlic
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper
- 18 ounces canned or jarred marinated artichoke hearts, drained and chopped
- Two 9- or 10-ounce bags prewashed spinach
- 8 ounces Brie cheese, cut into 1/4-inch cubes
- 4 ounces Monterey Jack cheese, grated
- 1/4 cup grated Parmigiano- Reggiano cheese

Creamy Chicken Enchiladas

Preheat oven to 350*F. Combine soup, sour cream and chilies in a bowl
- 1 pint sour cream
- 1 (10.5 ounce) can cream of chicken soup
- 1 (4 ounce) cans green chilies, diced
- 6 flour tortillas (we used whole wheat but any will work)
- 1 small package mild cheese, shredded
- 3 chicken breasts pre-cooked & cut up or use a Rotisserie Chicken
BLT Wraps Recipe

In a small bowl, toss quartered grape tomatoes with a dash of salt and pepper
- 10 slices bacon, cooked and crumbled
- 1 cup grape tomatoes, quartered
- Dash of salt and pepper
- 2 cups shredded lettuce
- 4 burrito sized tortillas
- 3 ounces cream cheese, softened (room temp is best)
- 1 tablespoon mayo
- 1 tablespoon dijon mustard

- 1 bag of egg dumpling noodles, cooked according to directions
- 1 can cream of celery soup
- 1 can cheddar cheese soup
- 1 cup milk
- 1/2 cup sour cream
- 2 Tbsp. chopped onion
- 1 tsp. Worcestershire sauce
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 large can 12 oz. tuna, drained and broken up

German Sour Cream Crullers

- 2 1/4 cups cake flour, plus more for rolling and cutting
- 1 1/2 teaspoon baking powder
- 1 teaspoon iodized salt
- 3/4 teaspoons ground nutmeg

- 1 (8 ounce) package cream cheese, softened
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese

- 1 cup pizza sauce
- 2 tablespoons chopped green bell pepper
- 2 ounces pepperoni minis sausage

Bacon Bourbon Meatballs

Place the uncooked bacon into a food processor; process for about 1 minute or until bacon is finely ground up
- 6 bacon slices
- 1/2 medium onion
- 1 lb. lean ground beef, ground beef and ground pork mix, ground turkey or your choice
- 1/2 c. breadcrumbs
- 2 T. freshly chopped parsley
- 1 large egg
- 1 t. chili powder
- 1 t. salt
- 1/2 t. pepper
- 1 T. vegetable oil
- 1 c. BBQ sauce
- 1/2 c. water
- 3 T. bourbon
Hot German Potato Salad

Cook for about 20 minutes or until potatoes are tender
- 6 Medium Potatoes
- 12 slices bacon
- 3 medium onions (1 1/2 cups chopped)
- 2/3 cup plus 2 tbsp. cider vinegar
- 1 1/2 tbsp. brown sugar
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. celery seeds
- Chopped parsley (optional)
Raspberry Poppy Seed Salad Dressing

3 EASY WAYS TO MIX THE DRESSING: --In a blender or food processor
- 1/4 cup grated/minced onion (half of a small onion)
- 1/2 cup raspberry vinegar, may substitute white wine vinegar
- 1/4 to 1/2 cup sugar, to taste
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 1/2 cup olive oil
- 1/2 cup vegetable or grapeseed oil
- 1-1/2 teaspoons poppy seeds
