- 1 large egg
- 1/2 cup light brown sugar, packed
- 1/3 cup canola or vegetable oil
- 1/4 cup granulated sugar
- 1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour + 1/4 cup for tossing with blueberries
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt, or to taste
- 1 cup mashed ripe bananas (from about 2 medium/large bananas)
- 1 cup coarsely grated zucchini, laid loosely in cup and not packed (don't wring out)
- 1 cup (6 ounces) fresh blueberries (I haven't tried with frozen)

Chop salmon into 1/8- to 1/4-inch pieces
- 2 1/2 pounds salmon filet, skin and pin bones removed
- 2 eggs, beaten
- 2/3 cup finely chopped parsley
- 1/4 cup finely chopped green onions
- 2 tablespoons fresh lemon juice
- 1/2 cup plain dried bread crumbs
- 1 tablespoon seafood seasoning (such as Old Bay®)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

- 2 1/2 c. powdered sugar
- 1 1/2 T. light corn syrup, honey, or agave (your choice, they all work great!)
- 1 1/2 T. water
- 1 T. cream cheese (for the vegan option, simply omit the cream cheese. It is still plenty creamy without it!)
- 1/2 t. peppermint extract
- 1/4 t. vanilla extract
- 1 1/2 T. shortening
- 2 cups semisweet morsels (go darker if you prefer; 65-75% chocolate works great too.)
- 2 T. butter (or shortening if you want to go vegan.)
