This pasta dish, made with Alfredo sauce, is deliciously different from typical tomato-based recipes
- 1 package (16 ounces) ziti or small tube pasta
- 2 cartons (10 ounces each) refrigerated Alfredo sauce
- 1 cup (8 ounces) sour cream
- 2 eggs, lightly beaten
- 1 carton (15 ounces) ricotta cheese
- 1/2 cup grated Parmesan cheese, divided
- 1/4 cup grated Romano cheese
- 1/4 cup minced fresh parsley
- 1-3/4 cups shredded part-skim mozzarella cheese

- 8 ounces dry rigatoni pasta, uncooked
- PAM® Original No-Stick Cooking Spray
- 1-1/4 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup chopped onion
- 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
- 1 can (10-3/4 oz each) condensed cream of mushroom soup
- 1 cup frozen green peas, thawed

1. Heat oven to 350°F. Spray 8-inch square pan with cooking spray
- 12 uncooked jumbo pasta shells
- 2 teaspoons vegetable oil
- 1 medium onion, chopped (1/2 cup)
- 1 can (15 oz) Progresso® pinto beans, drained, rinsed
- 1 1/2 teaspoons chili powder
- 1 package (3 oz) cream cheese, softened
- 3/4 cup Old El Paso® taco sauce
- 1 cup shredded Colby-Monterey Jack cheese blend (4 oz)
- 1/2 cup crushed corn chips
- 1/2 cup sour cream
- 4 medium green onions, sliced (1/4 cup)
Sopapilla Cheesecake

Line the bottom of a 9 x 13 casserole dish with 1 can of biscuits
- 2 cans of cresent rolls
- 2 8 ounce packages of cream cheese, softened
- 2 cups sugar
- 1 tsp. vanilla (Mexican vanilla, if you have it)
- 1/2 cup butter, melted (1 stick)
- 2 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1/2 teaspoon lemon zest
Chicken Cordon Bleu Rolls

1. Place one chicken breast on a piece of waxed paper
- 6 boneless, skinless chicken breasts, pounded to 1/4-inch thickness
- 6 slices prosciutto
- 6 slices Swiss cheese
- salt and pepper, to taste
- 5 1/2 ounces condensed cream of mushroom soup, (1/2 can)
- 1/4 cup milk
- 1/4 cup dry white wine
Pumpkin Cheesecake with Caramel Sauce

Treat your guests with a creamy pumpkin cheesecake that's topped with caramel-rum sauce
- CRUST:
- 2 cups crushed teddy bear-shaped cinnamon graham snacks (from 10-ounce box)
- 1/4 cup butter or margarine, melted
- FILLING:
- 4 packages (8-ounce each) cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 eggs
- 1 cup canned pumpkin (not pumpkin pie mix)
- 2 teaspoons pumpkin pie spice
- 3/4 teaspoon ground cardamom
- SPICED CARAMEL-SAUCE:
- 1/3 cup packed brown sugar
- 1/3 cup light or dark corn syrup
- 2 tablespoons butter or margarine
- 1/3 cup whipping cream
- 1 tablespoon spiced rum or 1/4 teaspoon rum extract
- sweetened whipped cream, if desired
Blueberry Struesel Muffins

Mix dry ingredients together
- 2 c. flour
- 1 tsp. salt
- 2 tsp. baking powder
- 1 c. sugar
- 11/2 c.blueberries(fresh or frozen)
- 1 c. milk
- 2 eggs (slightly beaten)
- 1/4 cup oil
- Topping
- 1/4 c. flour
- 1/8 tsp cinnamon
- 3/8 c. brown sugar
- 1/8 c. marg.
Guinness and Bailey's Irish Cream Cupcakes

1. To make the cupcakes, preheat oven to 350 F
- For the Guinness chocolate cupcakes:
- 1 cup stout beer/ Guinness
- 2 sticks unsalted butter
- 3/4 cup unsweetened cocoa
- 2 cups flour
- 2 cups sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 2 large eggs
- 2/3 cup sour cream
- For the Bailey's ganache filling:
- 8 oz. bittersweet chocolate, finely chopped
- 2/3 cup heavy cream
- 2 tbsn. butter, room temperature
- 2 tsp. Irish whiskey OR Bailey's Irish cream
- For the Bailey's buttercream frosting:
- 8 tbsn. unsalted butter, room temperature
- 3-4 cups powdered sugar, sifted
- 4 - 8 tbsn. Bailey's Irish cream
- (I also used some half&half to thin the frosting out w/o adding more alcohol)
