1. Toss diced tomatoes with basil, garlic, sun-dried tomatoes, olive oil, vinegar, and salt in a medium bowl

Preheat oven to 375 degrees
- 12 oz box jumbo shells
- 1 15-oz container ricotta cheese
- 1 cup Italian blend grated cheese
- 3/4 cup grated Parmesan cheese
- 12 oz cottage cheese
- 1 tsp salt
- 1/4 tsp pepper
- dash of ground nutmeg
- 24 oz of your favorite marinara sauce
- 1 1/2 cups grated mozzerella cheese
- 10 oz frozen spinach, defrosted with liquid wrung out

1. Cut the wonton wrappers into thirds
- Salted Butter Caramel Dipping Sauce:
- 30 wonton wrappers
- 1/3 cup granulated sugar
- 2 teaspoons ground cinnamon
- Oil for deep frying
- Makes about 1 1/3 cups of sauce
- 1 cup granulated sugar
- 6 tablespoons (salted, not unsalted) butter
- 1/2 cup + 2 tablespoons heavy cream at room temperature
- 1/2 teaspoon vanilla extract
- 1 teaspoon kosher salt

Buffalo Chicken Cheese Balls

1. Insert metal blade into food processor
- 4 cups cooked chicken, coarsely chopped
- 4 ounces cream cheese, softened
- 1/4-1/2 cup hot sauce (I used Frank's Red Hot)
- 3/4 tsp garlic powder
- 1/2 tsp onion powder
- salt and pepper
- 1 3/4 cup shredded cheddar cheese
- 1 cup flour
- 3 eggs, lightly beaten with about a TBSP of water
- 2 cups Panko breadcrumbs

- 2 16 oz. Cans Black Beans, Drained
- 1 16 oz. Can White Corn, Drained
- 1 16 oz. Can Tomato Sauce
- 2 Cans of Rotel
- 1 Package of Taco Seasoning
