Don’t try to double the recipe

  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 3 scallions, thinly sliced (dark green portion kept separate.)
  • 3 cloves of garlic, thinly sliced
  • 1 cup heavy cream
  • 1/2 cup chicken stock
  • 1/2 cup dry Vermouth
  • 1/2 cup sun-dried tomatoes, thinly sliced. (I used from a jar, recipe calls for the dry packed.)
  • 1 tablespoon tomato paste
  • 1 cup crumbled feta cheese (Bulgarian is best, if you can get it.)
  • 1/4 cup chopped parsley
  • 1/4 cup fresh basil. ( I didn’t use it.)

Although this recipe doesn't need a sauce, it does add to the presentation

  • 8 apples peeled and sliced ( I used a mixture of apple types.)
  • 2/3 cup brown sugar, firmly packed
  • 1 stick of butter
  • 1 vanilla bean, split and seeds scraped - divided
  • pinch of salt
  • 1 loaf of Challah bread, cut into 1 inch pieces (I used a loaf from Kroger.)
  • 1 1/2 cups whole milk
  • 1 1/2 cups heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg ( I did not add this.)
  • 1 cup white sugar
  • 4 whole eggs
  • 3 egg yolks
  • Brown Butter Sauce: 1 1/4 cups packed light brown sugar, 1 stick butter and 1/2 cup cream.
