Grilled Asparagus Wrapped in Eggplant

Cook asparagus in boiling water and plunge into ice water
- 1 eggplant cut into 1/4 inch slices
- 30 asparagus, tough ends cut off and remainder of stalk peeled
- Olive oil
- Teriyaki Sauce
Baked Apple Butter (sugar free)

1. Place peeled, diced apples in a large saucepan with the unsweetened apple juice
- 8 large granny smith apples, peeled and diced
- 1 cup unsweetened apple juice
- 1 cup Splenda (bulk)
- 2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon allspice
Barbecue Sauce

Heat oil. Add onion and garlic and sauté for about 5 minutes
- 1 tablespoon canola oil
- 2 cloves of garlic, minced
- 1/2 onion, minced
- 1 cup ketchup
- 1/3 cup brown sugar
- 4 tablespoons distilled vinegar
- 1 tablespoon Worcestershire sauce
- Salt
Corn and Red Pepper Bisque

This is a great soup in the summer when corn and peppers are in season
- Soup:
- 2 lbs. red bell peppers, chopped (about 6)
- 2 cups yellow onion, chopped
- 1 cup carrot, diced
- 1 tablespoon garlic, roughly chopped
- 4 cups fresh corn kernels
- 3 cups low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 1 teaspoon sugar
- 2 teaspoons kosher salt
- 1/2 cup half and half
- Basil Crema:
- 1 cup basil leaves
- 1/2 cup half and half
- 1 cup sour cream
Baked Shrimp Scampi

Preheat oven to 425 degrees Peel and devein shrimp, leaving on the tails
- 2 pounds shrimp (21-25 count). The original recipe calls for 12-15 count
- 3 tablespoons olive oil
- 2 tablespoons dry white wine
- Salt and pepper
- 12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
- 4 teaspoons minced garlic
- 1/4 cup minced shallots
- 3 tablespoons minced fresh parsley

- Cake:
- 1 cup water
- 3/4 cup sugar
- 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, diced
- 18 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 6 large eggs
- Ganache:
- 1 cup heavy whipping cream
- 8 ounces bittersweet or semisweet chocolate, chopped
- Lightly sweetened whipped cream

- Shortbread Layer:
- 2 1/2 cups flour
- 1 cup sugar
- 1 cup butter, 2 sticks, chilled and cut into chunks
- Middle Layer:
- 1/2 cup raspberry jam
- 1/2 cup white chocolate chips (You can use milk chocolate chips instead.)
- Crumb Topping:
- 1 1/2 cups flour
- 1 cup, 2 sticks butter, chilled and cut into chunks

1. Cook macaroni according to package directions
- 1 1/2 cups uncooked elbow macaroni
- 5 tablespoons butter, divided
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups milk
- 1 cup shredded cheddar cheese
- 2 ounces Velvetta (cubed)
- 2 tablespoons dry bread crumbs
Pasta with Shrimp in Tomato Cream Sauce

Don’t try to double the recipe
- 2 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 3 scallions, thinly sliced (dark green portion kept separate.)
- 3 cloves of garlic, thinly sliced
- 1 cup heavy cream
- 1/2 cup chicken stock
- 1/2 cup dry Vermouth
- 1/2 cup sun-dried tomatoes, thinly sliced. (I used from a jar, recipe calls for the dry packed.)
- 1 tablespoon tomato paste
- 1 cup crumbled feta cheese (Bulgarian is best, if you can get it.)
- 1/4 cup chopped parsley
- 1/4 cup fresh basil. ( I didn’t use it.)
Apple Bread Pudding with Brown Sugar Sauce

Although this recipe doesn't need a sauce, it does add to the presentation
- 8 apples peeled and sliced ( I used a mixture of apple types.)
- 2/3 cup brown sugar, firmly packed
- 1 stick of butter
- 1 vanilla bean, split and seeds scraped - divided
- pinch of salt
- 1 loaf of Challah bread, cut into 1 inch pieces (I used a loaf from Kroger.)
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg ( I did not add this.)
- 1 cup white sugar
- 4 whole eggs
- 3 egg yolks
- Brown Butter Sauce: 1 1/4 cups packed light brown sugar, 1 stick butter and 1/2 cup cream.
