Cherry Chocolate Chunk Cookies

1. Preheat oven to 375 degrees
- 2 1/4 cup unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup butter flavored shortening
- 1/2 cup white sugar
- 3/4 cup light brown sugar
- 2 eggs
- 1 1/2 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup dried cherries
- 1 cup toasted, chopped pecans
- 1 (12 ounce) bag semi-sweet chocolate chunks
Garlic and Shallot Smashed Potatoes

The potatoes will brown on the bottom and are delicious as a side dish
- 25-30 baby red potatoes
- 2 cloves of garlic
- 2 shallots
- 3 tablespoons olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried parsley flakes
- 1/4 teaspoon black pepper
- All of these amounts are very flexible. I found that I used the above amount for only half as many potatoes. I used additional olive oil to brush on the finished potatoes as well.
Strawberry Vinaigrette

Combine all ingredients except oil in a food processor
- 1/2 pound strawberries, cleaned and quartered
- 1 tablespoon honey
- 2 tablespoons apple cider vinegar
- 3 tablespoons olive oil
- 1/4 teaspoon salt and pepper
Quinoa Salad with Arugula

The ratio of quinoa to arugula is up to you
- Dressing:
- 1/2 cup cooked quinoa, cooled (See note below about cooking.)
- 8 sun dried tomatoes in oil, cut small plus 1 tsp. of oil from the sun dried tomatoes
- 3 ounces feta cheese, crumbled or cut in small chunks
- 1 1/2 cups arugula
- 1 1/2 tbsp. toasted pine nuts
- 1/3 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1/4 teaspoon salt
Kiwi Christmas Tree

Peel the kiwi, keeping a part of the skin for a trunk
- 4-5 kiwi, sliced into 1/4 inch slices
- Pomegranate seeds
- Pineapple slice cut in the shape of a star
Cranberry-Orange Scones

These are supposed to be made with tangerines, but works just as well with oranges
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1-2 tablespoons grated orange peel
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chilled unsalted butter, cut into small pieces
- 1/2 cup dried cranberries
- 1/4 cup sour cream or creme fraiche
- 3 tablespoons orange juice
- 1 large egg
- 2 teaspoons unsalted butter, melted
- 2 teaspoons raw sugar (Why turbinado or demerar sugar? It won't melt on top of the scones)
Lemon Semifreddo with Summer Berries

Line a 9x5x3 inch metal loaf pan with plastic wrap, leaving generous overhang
- 1/2 cup sliced almonds, toasted
- 1 3/4 cups chilled heavy whipping cream
- 1 1/4 cups sugar
- 7 large egg yolks
- 1/2 cup fresh lemon juice
- 1 tablespoon plus 2 teaspoons finely grated lemon peel
- 1/4 teaspoon salt
- 4 cups mixed fresh berries
Garlic Shrimp (main dish or appetizer)

Shell and devein shrimp. Mix salt, pepper, lemon juice, garlic and mayonnaise together
- 2 pounds extra large shrimp, raw
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons lemon juice
- 3 cloves of garlic, crushed
- 4 tablespoons mayonnaise
- 1 1/2 cups fine dry bread crumbs
- 1 teaspoon crushed dry basil leaves
- 2 teaspoons chopped parsley
- 1/2 teaspoon dried dill weed
- 1/2 cup melted butter
- 4 tablespoons olive oil
Red, White and Blue Green Salad

Any proportions of the ingredients may be used
- 2 cups mixed salad greens (I used baby spinach.)
- 1/4 cup crumbled feta cheese
- 2 tablespoons candied or toasted walnuts
- 4 strawberries, sliced
- 1/4 cup blueberries
- Raspberry vinaigrette dressing
- 1 cup fresh raspberries
- 1 tablespoon white sugar
- 2/3 cup balsamic vinegar (I used unseasoned rice vinegar, and only used about 1/3 cup.)
- 1/2 cup olive oil (I used light olive oil.)
- 1/2 teaspoon salt
Parchment Shrimp Scampi

Marinate shrimp in olive oil for a couple hours
- 1 piece of parchment paper 17x12
- 5 tiger prawns, peeled and deveined (12 per pound)
- portion of cooked angel hair pasta (I used whole grain)
- 4 pieces grilled asparagus or blanche and shock in ice water
- 1 tomato, cut in half and roasted
- 1 grilled portobello mushroom, cut in half, or baby bellas, whole
- 2 tablespoon herb garlic butter
- Salt and pepper to taste
