Frittata - Zucchini 'Parmesan & Herbs

A shredding and drying technique is the best choice when you are pressed for time and want to cook zucchini indoors
- 3 tablespoons olive oil
- 4 medium zucchini (about 1 1/3 pounds), rinsed, trimmed, shredded, and squeezed dry (see illustrations 1 and 2, below)
- 2 medium cloves garlic , minced
- 1 - 2 tablespoons minced fresh parsley leaves , tarragon, basil, or mint
- Table salt and ground black pepper
- 6 large eggs
- 3 tablespoons grated Parmesan cheese
- 2 teaspoons olive oil

1.) Create Ricotta Cheese Mixture: In a mixing bowl, beat one large egg, then add in ¾ cup Ricotta cheese
- 8 oven-ready lasagna noodles
- 2 cups Mozzarella cheese , shredded in large pieces
- ¼ cup Parmesan cheese , grated
- 2.5 - 3 cups meat sauce
- Salt + pepper to taste

- ¾ cup Ricotta cheese
- 1 teaspoon Italian seasoning
- 1 large egg
- ⅓ teaspoon kosher salt

- 3 -4 large tart apples, cored and cut into wedges
- 2 tablespoons fresh lemon juice
- 2/3 cup apple juice (can use less)
- 2/3 cup packed brown sugar (or more to taste)
- 3 tablespoons butter (or more to taste)
- 1 teaspoon cinnamon (or more to taste)

- 4 cups cauliflower florets
- 1 oz butter flavored cooking spray
- 1 fluid ounce fat-free half-and-half pinch salt

- 1 pound zucchini (about 2 medium), trimmed
- 1 teaspoon table salt
- 8 ounces feta cheese , crumbled (about 2 cups)
- 2 scallions , minced
- 2 tablespoons minced fresh dill
- 2 large eggs , lightly beaten
- 1 medium garlic clove , minced or pressed through a garlic press (about 1 teaspoon)
- 1/4 teaspoon ground black pepper
- 1/4 cup unbleached all-purpose flour
- 6 tablespoons olive oil
- 1 lemon , cut into wedges (for serving)
