Snapper - Grilled 'Tex Mex'

- 2 - 3 pounds chuck roast/blade roast , 2 - 2.5 inches thick

Kabobs - B'SirloinStk [Gr] 'Red Pepper Dipping Sauce

1 Heat oil in large skillet over medium heat until hot
- Dipping Sauce:
- 1- 1/2 lb boneless beef top sirloin steak, cut 1" thick
- 2 tsp coarse grind black pepper
- 3/4 tsp salt
- 3/4 tsp sweet paprika
- 2 cloves garlic, minced
- 1 Tbs olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 jars (7 ounces each) roasted red peppers, rinsed, drained, finely chopped
- 1/2 cup dry white wine
- 2 Tbs tomato paste
- 3/4 tsp dried thyme leaves, crushed or 2 tsp minced fresh thyme

- 1/2 cup low-sodium chicken broth
- 2 (15.5 ounces each) cans pinto beans , drained and rinsed
- 1 Tbs vegetable oil
- 3 oz salt pork , rind removed and diced very small
- 1 small onion , chopped fine (about 3/4 cup)
- 1 jalapeno chile , seeds and ribs removed, chile minced
- 1 poblano chile , seeds and ribs removed, chile chopped fine (about 1/4 cup)
- 1/4 tsp table salt
- 3 small cloves garlic , minced or pressed through garlic press (about 1 1/2 teaspoons)
- 1/2 tsp ground cumin
- 1 Tbs minced fresh cilantro leaves
- 2 tsp fresh lime juice (optional)
Mayo 'Wasabi & Sour Cream

- 1 1/4 cups water
- 1 1/4 pounds skinless, boneless chicken breast halves, cut into 1-inch pieces
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon poultry seasoning, crushed
- 1 tablespoon vegetable oil
- 1 package (16 ounces) frozen mixed vegetables (carrots, green beans, corn, peas), thawed
- 1 cup instant mashed potato flakes
- 1 cup fat free evaporated milk
- 1/4 cup shredded (2% milk) low fat Cheddar cheese
