Chicken - Breast [Sk] 'Lettuce Wraps (PF Change KK)

1 Mix all ingredients for cooking sauce in bowl & set aside
- 1 tsp CornStarch
- 2 tsp Dry Sherry
- 2 tsp H20
- 1- 1/2 lbs Chicken Breast
- 5 Tbs Oil
- 1 tsp Grat’d Fresh Ginger
- 2 Cloves Minced Garlic
- 2 ea. Minced Scallions
- 2 sm. Chilies
- 1 Pkg. Cellophane Noodles
- Salt & Pepper for Taste
- COOKING SAUCE
- 1 Tbs Hoisin
- 1 Tbs Soy Sauce
- 1 Tbs Dry Sherry
- 2 Tbs Oyster Sauce
- 2 Tbs H20
- 1 tsp Sesame Oil
- 1 tsp Sugar
- 2 tsp CornStarch
- ICEBERG OR BIBB LETTUCE
Salad - Pork 'Sausage, Apples & Cider Vinaigrette

1. In small saucepan over medium heat, bring cider vinegar to a simmer
- Cider Vinaigrette:
- 1 pound sausages, boiled for 5 minutes or until cooked through
- 1 pound tart apples (Granny Smith or Gala), peeled and cored
- Extra-virgin olive oil
- Ground allspice
- Coarse salt and freshly ground black pepper
- 4 cups greens, such as arugula, watercress, young Swiss chard, frisee, romaine hearts
- 2 tablespoons sunflower seeds, toasted
- 1/2 cup organic or artisanal apple cider vinegar
- 1 shallot, minced
- 2 tablespoons chopped mixed herbs such as chives, tarragon, and parsley
- 2 tablespoons Dijon mustard
- 1 cup sunflower or canola oil
- Coarse salt and freshly ground black pepper

- 3 –4 ears corn in the husk
- 2 tablespoons unsalted butter
- 1 onion , sliced
- 2 cloves garlic , minced
- 4 medium zucchini , sliced into thin rounds
- 2 New Mexico chile peppers or other fresh red chiles, roasted, peeled, seeded, and diced
- 1/2 cup grated cheddar cheese

1. FOR THE BREAD CRUMBS (optional): Pulse bread in food processor until coarsely ground
- Bread-Crumb Topping (optional)
- 2 slices white sandwich bread , torn into quarters
- 2 tablespoons unsalted butter
- Zucchini
- 5 medium zucchini (about 8 ounces each), ends trimmed
- Table salt
- 1 small clove garlic , minced or pressed through a garlic press

- 1/4 pound turkey Italian sausage links, casings removed
- 1 1/2 cups frozen shredded hash brown potatoes, thawed
- 1/2 cup chopped onion
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 eggs
- 2 egg whites
- 1 garlic clove, minced
- 1 teaspoon canola oil
- 1/3 cup water
- 1 teaspoon dried oregano
- 1 cup 1% buttermilk
- 2 tablespoons all-purpose flour
- 1/4 cup shredded Parmesan cheese
- 3/4 cup salsa
Risotto 'Creamy Corn & Garlic

- 3- 3/4 cup Vegetable Broth

Zuke [S] 'Garlic & Herbs

A shredding and drying technique is the best choice when you are pressed for time and want to cook zucchini indoors
- 3 tablespoons olive oil
- 4 medium zucchini (about 1 1/3 pounds), rinsed, trimmed, shredded, and squeezed dry
- Wrap shredded (and drained, if instructed) zucchini in towels to squeeze out the excess liquid. Proceed immediately with recipe.
