B'Roast - TriTip/Btm Round [Gr] 'California'

- 1 tri-tip roast (about 2 pounds) , trimmed
- 6 garlic cloves , minced
- 2 tablespoons Olive oil
- 3/4 teaspoon salt
- 2 cups wood chips , preferably oak

The success of this recipe depends on good-quality produce
- 6 tablespoons extra-virgin olive oil
- 1 pound zucchini , ends trimmed and sliced crosswise into 1/4-inch-thick slices (see note)
- 1 pound summer squash (yellow), ends trimmed and sliced crosswise into 1/4-inch-thick slices (see note)
- 2 teaspoons table salt
- 1 1/2 pounds ripe tomatoes (3 to 4 large), sliced 1/4 inch thick
- 2 medium onions , halved lengthwise and sliced thin pole to pole (about 3 cups)
- 3/4 teaspoon ground black pepper
- 2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
- 1 tablespoon minced fresh thyme leaves
- 1 large slice white sandwich bread , torn into quarters
- 2 ounces Parmesan cheese , grated (about 1 cup)
- 2 medium shallots , minced (about 1/4 cup)
- 1/4 cup chopped fresh basil leaves
Tuna - Grilled 'London Broil'

'Wasabi Cream Sauce
- 2 teaspoons untoasted sesame seeds
- 2 teaspoons wasabi powder
- 2 teaspoons cracked black peppercorns
- 2 teaspoons garlic salt
- 1-1/2 pounds tuna loin, or 4 tuna steaks (each about 1 to 1-1/2 inches thick and 6 to 8 ounces)
- 2 teaspoons Asian (dark) sesame oil Wasabi Cream Sauce (recipe follows)
- Sliced scallions and toasted sesame seeds, or black sesame seeds, for serving (optional)
Salad - Spinach 'Canadian Bacon & Gouda

- 6 oz Sliced Canadian Bacon - cut into halves
- 4 oz Gouda Cheese - sliced
- 1 med. Fresh Peach - peeled, pitted & sliced or Nectarines - sliced.
- 1/4 cup Honey Dijon Dressing

- • 4 pound turkey breast, on the bone with skin (ribs removed)
- • 1 tablespoon olive oil
- • 2 teaspoons kosher
- • 1/2 tablespoon dry turkey or poultry seasoning
Mahi Mahi - Grilled

- 450 g Mahi mahi or swordfish, fresh or frozen
- 2 teaspoons olive oil
- 2 tsp lemon juice
- 1/4 tsp salt
- 2 cloves garlic, minced
- Capers ( optional)

- 1 cup Raspberry yogurt
- 1 cup vanilla frozen yogurt
- 1/2 frozen banana (chunks)
- 1-1/2 cup frozen Raspberries
Salad - Broccoli 'Sesame Sauce

- 2 lbs Broccoli - trimmed
- 1/4 cup Soy Sauce
- 1/2 tsp Honey
- 2 Tbs Sesame Oil
- 1/4 cup Sesame Seeds - toasted
- 6 leaves Romaine Lettuce
