Eggs - Scrambled 'Bacon & Onion

1. Crack eggs into medium bowl; add salt, pepper, and half-and-half
- 12 large eggs
- 3/4 teaspoon table salt
- 1/4 teaspoon ground black pepper
- 6 tablespoons half-and-half
- 4 slices bacon (about 4 ounces), halved lengthwise, then cut crosswise into 1/2-inch pieces
- 1 medium onion , chopped medium (about 1 cup)
- 1 tablespoon unsalted butter
- 1 1/2 ounces Pepper Jack cheese or Monterey Jack, shredded (about 1/2 cup)
- 1 teaspoon minced fresh parsley leaves (optional)

- Spice Rub and Beef
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 teaspoon cayenne pepper
- 1 boneless beef chuck-eye roast (5 to 6 pounds)
- 3 cups wood chips , soaked for 15 minutes
- Barbecue Sauce
- 1 onion , chopped fine
- 4 garlic cloves , minced
- 1/2 teaspoon chili powder
- 1-1/4 cups ketchup
- 3/4 cup brewed coffee
- 1/2 cup cider vinegar
- 1/2 cup packed brown sugar
- 3 tablespoons Worcestershire sauce
- 1/2 teaspoon pepper
Casserole - B'Grnd 'Verde'

1.) Preheat oven to 350 deg F
- 1 (7 oz.) can Whole Green Chilies
- 1 (8 oz.) package Monterrey Jack Cheese, shrdd
- 2 lbs Ground Beef
- 6-8 eggs
- 1-1/2 cup Milk
- 1/2 cup flour
Marinara Sauce

- 2 (28 ounce) cans whole tomatoes , packed in juice
- 2 Tbs olive oil
- 1 medium onion , chopped fine (about 1 cup)
- 2 medium cloves garlic , minced or pressed through garlic press (about 2 teaspoons)
- 1/2 tsp dried oregano
- 1/3 cup dry red wine , such as Chianti or Merlot
- 3 Tbs chopped fresh basil
- 1 Tbs extra virgin olive oil
- Table salt and ground black pepper
- 1 - 2 teaspoons sugar , as needed (see note above)

- 4 tuna steaks , 8 ounces each and about 1 inch thick
- 2 tablespoons vegetable oil
Taters - Hasselback 'Air Fried

- 4 Russet Taters
- Olive Oil, as needed

Pasta 'Creamy Asparagus'

- 1 pound fresh asparagus, trimmed and
- cut into 2 inch pieces
- 2 tablespoons butter
- 1 clove garlic, minced
- 1 pint light cream
- 1 pound linguine pasta
- 1 lemon, juiced
Marinade 'Southwestern'

Combine all ingredients, stirring until well blended
- 2 Tbs Cilantro - chopped
- 1/4 cup Prepared Salsa
- 2 Tbs Fresh Lime Juice
- 1 Tbs Vegetable Oil
- 1 clove Garlic - minced
- 1/4 cup Ground Cumin
Oil 'Turmeric'

1. Place the oil and the turmeric in a food processor and blend
- 8 oz. canola oil
- 2 Tbsp ground turmeric
Sandwich - Tuna 'Pan Bagnat'

1 * To get the juices flowing, place whole lemon in microwave on high for 10 seconds
- 1 French baguette
- 1 six to eight-ounce tuna steak
- 1 bay leaf
- 5 whole peppercorns
- Juice of 1 lemon
- 3 Tbs capers, drained
- 1/4 red onion, chopped
- 1 can artichoke hearts in water, 15 ounces, drained, coarsely chopped
- 1/2 cup good quality black olives, from bulk bins in deli area of market
- 1/4 cup chopped flat leaf parsley, a couple of handfuls
- Coarse black pepper, to your taste
- 2 to3 tablespoons extra-virgin olive oil, to your taste
