Chicken - Breast [CP] 'Teriyaki

1. Place chicken breasts on bottom of slow cooker
- 1 1/2 pounds, or about 3 large, boneless skinless chicken breasts
- 1/2 cup soy sauce
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 2 tablespoons cornstarch + 1/4 cup water
- rice or quinoa, for serving
- sesame seeds, for garnish
- sliced green onions, for garnish
Chicken - Breast [Gr] 'Lemon-Parsley

This chicken can be served with a simply prepared vegetable for a light dinner
- 1 teaspoon Dijon mustard
- Gas Grill
- 2 tablespoons fresh lemon juice
- Grilled Orange-Tarragon
- 6 tablespoons olive oil
- 1 tablespoon minced fresh parsley leaves
- 1 1/4 teaspoons sugar
- Table salt and ground black pepper
- 3 medium garlic cloves , minced or pressed through a garlic press (about 1 tablespoon)
- 2 tablespoons water
- 4 boneless, skinless chicken breasts (6 to 8 ounces each), trimmed of excess fat
- Vegetable oil for grill rack

Gumbo - Chicken/Pig/Shrimp [St] 'X-Mas'

1. To prepare the stock: Peel the shrimp and refrigerate, reserving the shells
- 1 pound shell-on Gulf prawns
- 6 cups vegetable stock
- 1 large smoked ham hock (or shank)
- Vegetable oil (for frying)
- 1 pound andouille sausage links, sliced into 1/2-inch rounds
- 8 chicken thighs, skin on and bone-in
- 1 large yellow onion, diced
- 1 large green bell pepper, diced
- 4 celery stalks, with leaves, diced
- 3/4 cup all-purpose flour
- 1/2 cup vegetable oil mixed with 1/4 cup peanut oil
- 1 1/2 teaspoons ground cayenne pepper
- 1 1/2 teaspoons sweet paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon ground white pepper
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 2 bay leaves, crumbled
- 2 garlic cloves, chopped
- 3 tablespoons file powder
- For garnish
- 1/2 pound fresh Dungeness crabmeat

- 2 cups table salt
- 1 turkey (12 to 14 pounds gross weight), rinsed thoroughly; giblets and neck reserved for gravy (if making), and
- tailpiece removed
- Herb Paste
- 1 1/4 cups chopped fresh parsley leaves (roughly chopped)
- 4 teaspoons minced fresh thyme leaves
- 2 teaspoons chopped fresh sage leaves (roughly chopped)
- 1 1/2 teaspoons minced fresh rosemary
- 1 medium shallot , minced (about 3 tablespoons)
- 2 medium cloves garlic , minced or pressed through garlic press (about 2 teaspoons)
- 3/4 teaspoon grated lemon zest , from 1 lemon
- 3/4 teaspoon table salt
- 1 teaspoon ground black pepper
- 1 teaspoon Dijon mustard
- 1/4 cup olive oil

- 1 lb boneless skinless chicken thighs, chopped
- 1 lb boneless skinless chicken breast, chopped
- 1/3 cup brown sugar (or Stevia, maple syrup, honey)
- 1/3 cup low sodium soy sauce (GF if needed)
- 10 cloves garlic, whole
- 1/2 red onion, diced
- 2 jalapenos, diced (or Sriracha)
- 1 tbsp fresh ginger root, peeled and grated
- 2 tbsp rice vinegar
- 2 tbsp sesame seeds

- 3 Tbs Worcestershire sauce
- 2 Tbs parsley, chopped
- 1 1/2 tsp chili powder
- 1 tsp garlic powder
- Salt and Pepper to taste
- 1/2 tsp minced dried onion
- 1/2 tsp ground pepper
- 1/4 tsp hot sauce
- 1 1/2 lbs extra lean ground beef
- 1 oz low-fat cheddar cheese cut into 4 pieces
