Tofu - orange-chipotle glazed

- 1 cup orange juice
- 1/4 cup maple syrup
- 2 tablespoons rice vinegar or cider vinegar
- 2 teaspoons minced seeded chipotle chile in adobo sauce, drained, plus 2 tsp adobo sauce
- 1/4 teaspoon salt
- 2 14 oz pkg extra firm tofu, drained & patted dry
- 1 tablespoon veg oil
Lentil Soup

Chop veggies, Sweat onion in olive oil, add other veggies & saute til tender (add garlic last to avoid burning it)
- 1 lb lentils
- 8 cups liquid- i used Imagine "no chicken" broth
- olive oil
- 1 onion
- 2 stalks celery
- 2 carrots
- 1 turnip
- 1 parsnip
- 1 or 2 cloves garlic
- 1 lb pasta- used shells
- salt & pepper
Savoiardi Biscuits

- 75 g granulated sugar
- 95 g cake flour, sifted (or 3/4 cup plain flour + 2 tbsp cornflour or corn starch)
- 50 g icing sugar or confectioner's sugar

- Almond Crunch Topping
- 1/3 cup finely ground almonds
- 4 teaspoons turbinado sugar
- Muffins
- 2 cups fresh blueberries (about 10 ounces), picked over
- 1 1/8 cups sugar (8 ounces) plus 1 teaspoon
- 2 1/2 cups unbleached all-purpose flour (12 1/2 ounces)
- 2 1/2 teaspoons baking powder
- 1 teaspoon table salt
- 1/3 cup finely ground almonds
- 2 large eggs
- 4 tablespoons unsalted butter , melted and cooled slightly (1/2 stick)
- 1/4 cup vegetable oil
- 1 cup buttermilk (see note)
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon almond extract

TURKEY GRAVY cooksillustrated
- Reserved turkey giblets , neck, and backbone, hacked into 2-inch pieces
- 1 medium carrot , cut into 1-inch pieces
- 1 rib celery , cut into 1-inch pieces
- 2 small onions , chopped coarse
- 6 cloves garlic , unpeeled
- 3 1/2 cups chicken stock or canned low-sodium chicken broth (two 14 1/2-ounce cans)
- 2 cups dry white wine
- 6 sprigs fresh thyme
- 1/4 cup unbleached all-purpose flour
- Salt and ground black pepper

- 1 tablespoon vegetable oil, plus more for work surface
- 1 1/2 teaspoons table salt
- SAUCE
- 1 (28-ounce) can whole peeled tomatoes, drained and liquid discarded
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon red wine vinegar
