Bread - European Peasant

The New Artisan Bread in 5 Minutes A Day (Hertzberg & Francois) p 94/ Yield: 2 large loaves or 4 smaller loaves
- Cornstarch wash from The new Artisan Bread in 5 Minutes a Day: p 104:
- Using a fork, blend 1/ tsp cornstarch with a small amt of water to form a paste.
- Add 1/2 cup water & whisk with fork.
- Microwave or boil til the mixture appears glassy, abt 30 - 60 seconds on high. It will keep in the fridge for abt 2 weeks.

- Granulated yeast: 1 tbs/ 0.35 oz / 10 grams

- Rye flour: 1/2 cup/ 2 1/8 oz/ 60 grams
- Whole wheat flour: 1/2 cup/ 2 1/4 oz 65 grams (i used white whole wheat)
- AP flour: 5 1/2 cups/1 lb, 11 1/2 oz/ 780 grams
- Opt:
- 1 Tbs sugar
- 2 Tbs Soy lecithin
- Asst seeds for topping
Crab Stuffed Flounder Roulades

- Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
- 3 tablespoons unsalted butter
- 1/2 pound fresh lump crabmeat, picked over for shells and cartilage
- 1 1/2 teaspoons Essence, recipe follows
- 1/4 cup minced yellow onion
- 2 tablespoons minced celery
- 2 tablespoons minced green bell pepper
- 2 tablespoons finely chopped fresh parsley leaves
- 1 1/2 teaspoons minced garlic
- 2 tablespoons mayonnaise
- 1 egg, lightly beaten
- 4 teaspoons fresh lemon juice
- 1/2 teaspoon Worcestershire sauce
- 3/4 teaspoon Emeril's Hot Sauce or other red hot sauce
- 3/4 cup crushed butter crackers (recommended: Ritz)
- 1 1/4 teaspoons salt
- 1/4 teaspoon freshly ground black pepper
- 4 (6 to 8-ounce) flounder fillets, skinless, pin bones removed
- 2 lemons, 1 cut into thin slices and 1 cut into wedges for serving
- 3 tablespoons melted unsalted butter, for drizzling over the fish

- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano

- Combine all ingredients thoroughly.
- Yield: 2/3 cup

- 2 tablespoons soy sauce
- 2 tablespoons orange marmalade

- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup flour
- 2 tablespoons sesame seeds
- 3 tablespoons butter, melted

- Topping:
- 3 cups baked sweet potatoes
- 1 cup sugar-change to 3/4 cup - can use less
- 1/2 cup butter, softened (1 stick)-change to 3/4 stick (Smart Balance: 3/8 cup)- (can use less -for 3x recipe use 2 sticks)
- 1 teaspoon vanilla extract
- 1/3 cup milk
- 1 egg
- 1 cup brown sugar - use less-change to 3/4 cup
- 1/2 cup butter (1 stick)-change to 3/4 stick (Smart Balance =3/8 cup)-for 3x recipe use 2 sticks)
- 1/2 cup flour
- 1 cup chopped pecans or almonds
- For vegan: replace butter with vegan Smart Balance, replace milk with soy milk, leave out eggs
- For Amy: use vegan Smart Balance, alternative milk, replace sugar with half the amount of fructose
