  • DOUBLE RECIPE:
  • 2 cups small-curd low-fat or nonfat cottage cheese
  • 1 1/2 pounds summer squash (can be yellow, green or a mixture)
  • Salt to taste
  • 1/2 medium onion, finely chopped
  • 1 to 2 garlic cloves, minced (optional)
  • 1 tablespoon extra virgin olive oil
  • 4 eggs
  • 1/4 cup chopped flat-leaf parsley (i used a little dried)
  • 2 tablespoons chopped fresh dill (i only used a sprinkle)
  • 1/4 cup grated Gruyère cheese (I used 8 oz chopped mozzarella instead)
  • Freshly ground pepper
  • Serve w/tomato sauce on the side
