Cake -Vanilla Buttermilk - vegan - double recipe

- 4 1/3 cups AP flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups sugar
- 2 cups buttermilk (for vegan add 1 tbs vinegar to soy milk)
- 1 cup veg oil
- 1/2 cup apple sauce (for extra moistness-not in orig recipe-in Co use 1/4 cup)
- 2 tablespoons vanilla extract - use less if using vanilla milk, also for lighter color

PREPARATION Heat oven to 325 degrees
- ½ cup cocoa
- ½ cup butter (1 stick)
- 2 eggs
- 1 cup sugar
- ¼ cup flour
- 1 cup chopped or broken-up walnuts or pecans
- 1 teaspoon vanilla
- Pinch of salt
- Try: double recipe, add 1/8 tsp cayenne, bake in 9 x 13 pan for 25 mins

- 8 ounces bittersweet chocolate , chopped fine (see note)
- 12 tablespoons (1 1/2 sticks) unsalted butter , cut into 1/2-inch pieces
- 2 teaspoons vanilla extract
- 1/4 teaspoon instant espresso powder
- 1 3/4 cups (about 7 ounces) sliced almonds , lightly toasted
- 1/4 cup unbleached all-purpose flour (1 1/4 ounces)
- 1/2 teaspoon table salt
- 5 large eggs
- 3/4 cup (5 1/4 ounces) sugar
- 1/2 cup fresh raspberries , plus 16 individual berries for garnishing cake
- 1/4 cup seedless raspberry jam
- Chocolate Ganache Glaze
- 5 ounces bittersweet chocolate , chopped fine (see note)
- 1/2 cup plus 1 tablespoon heavy cream

- Ingredients
- 2 pounds fresh ricotta cheese, wrapped in cheesecloth and hung overnight in refrigerator
- 1 (9-ounce box) frozen spinach, defrosted and water squeezed out
- 4 eggs
- 2 cups grated Parmigiano-Reggiano, plus more for sprinkling
- 2 to 3 grates fresh nutmeg
- Kosher salt
- 1/4 to 1/2 cup all-purpose flour, plus more for the outside of the gnocchi
- Semolina, for holding the gnocchi
- Sauce:
- 12 to 15 super-ripe plum tomatoes
- Extra-virgin olive oil
- 1 small onion, finely diced
- Kosher salt
- Pinch crushed red pepper flakes
- 2 cloves garlic, smashed and finely chopped
- 6 to 7 basil leaves, cut into a chiffonade
- Grated Parmigiano-Reggiano, for garnish
