Adapted from The Artful Cupcake - Chocolate Buttermilk cupcakes
- 2 1/3 cups AP flour THIS SHOULD READ 2 1/6 CUPS -REFUSES TO SAVE AS SUCH
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1 cup buttermilk (for vegan add 1 tbs vinegar to soy milk)
- 1/2 cup veg oil
- 1/4 cup apple sauce (for extra moistness-not in orig recipe-(in Co use 1/8 cup)
- 1 tablespoon vanilla extract - use less if using vanilla milk, also for lighter color
