Lemon Almond Cookies

This is a famous recipe in the family from the days of the Nyack Mother-Daughter Tea
- 1/2 cup almonds, unskinned
- 1/2 cup sugar
- 1/2 tsp Unsalted butter
- 1 tsp Vanilla Extract
- Grated peel of 1/2 lemon
- 1 Egg
- 2/3 cup whole wheat flour, or all purpose flour
- 1/4 tsp ginger
Chayote soup

Simmer chayote slices in 2 cups salted water in a medium saucepan until tender, about 20 minutes
- 2 large chayotes, peeled and sliced
- 2 onions, finely chopped
- 2 cloves garlic, chopped
- 2 Tablespoons butter
- 1 potato, grated
- 3 cups vegetable or chicken stock
- salt and white pepper to taste

Coconut Macadamia Shortbread

1. Preheat oven to 325°. Line two baking sheets with parchment paper; set aside
- 1 cup macadamia nuts (3 ounces), toasted
- 3/4 cup plus 2 tsp sugar
- 1 cup sweetened shredded coconut, plus 1/2 cup for topping
- 3/4 cup (11/2 Stics) plus 1 tsp unsalted butter. room temperature
- 4 tsps creamed coconut or unsalted butter
- 2 tsps pure coconut extract
- 2 cups all-purpose flour
- 1/2 tsp coarse salt
- 1 large egg white, lightly beaten
Valentine's Day Chocolate Cookies

1. Sift flour, cocoa, salt, and cinnamon together into a bowl; set aside
- 1 1/2 cups All-purpose flour
- 1 1/2 cup plus 2 tsps Unsweetened cocoa powder
- 1/8 tsp Salt
- 1/4 tsp Ground cinnamon
- 1 1/2 sticks Unsalted butter
- 1 1/4 cups Sifted confectioners' sugar

Valentine's Day Sugar Cookies

1. Sift flour, salt, and baking powder together into a bowl; set aside
- 2 cups All-purpose flour
- 1/4 tsp Salt
- 1/2 tsp Baking powder
- 1 stick Unsalted butter (8 tsps), softened
- 1 cup Granulated sugar
- 1 Large egg
- 1 tsp Pure vanilla extract
Chewy Molasses-Spice Cookies

1. Preheat oven to 350°. In a medium bowl: whisk flour, baking soda, cinnamon, nutmeg, and salt

- 1 1/2 cups Sugar

- 12 tbs Unsalted butter (1 1/2 sticks)
- 1 tsp Ground Cinnamon
